Brunch was leftover steak, a piece of leftover potato, ½ a large tomato with salt, pepper, 2 tbsp. of Walden Farms sugar free Thousand Island dressing. Snack, kefir & blueberries with sweetener. Supper neckbones cooked until the meat falls off the bone and cabbage.

I am not on a strictly low carb diet, but my supper tonight was spaghetti squash stuffed with eggs and a touch of home-made salsa the wife made from roasted, dried tomatoes. Pretty carb-free.

I actually had eggs for "brunch" and eggs for dinner. We are getting inundated with eggs now that the hens are laying again, so we have to eat them often.

For tonight supper, I am planning on making, in the slow cooker, my sweet and sour meatballs...... Yes, it is a low carb version..
I use minced chicken for the meatballs....
A salad will go nicely with them...

Breakfast will be my homemade pancakes that I make with wheat gluten flour... Again they are low carb..
Served with butter and a S/F syrup ....
    Pot of Folgers..

    PROBLEM !!!!
I can't find my recipe for sweet and sour meatballs but I already have the minced chicken thawed which mean I must use it for supper...
I decided on some sort of a mishmash casserole I make with the minced, loads of veggies, cheese and some liquid...

Brunch was 4 oz. of Angus beef tenderloin grilled in 1 tablespoon of butter..... 2 eggs, 1 tsp. of cream, 1 slice of cheese scrambled together. Coffee and cream with sweetener. Snack was fresh pineapple. Yum!

Supper; more Angus beef tenderloin cooked on the charcoal grill and a salad. Piggly Wiggly had the Angus beef tenderloin on sale. I don't usually buy a lot of that because it is so expensive.
