WOW !!!!! Talk about a carb loaded meal we had last night.. I think I had enough carbs for the rest of the year,.... and then some... Well. its all over and now we are back to healthy eating again and lighter meals.. As a start, I will be making fish for supper tonight.. Fillets of salmon, lightly breaded in herbs and spices only, and fried in butter and EVOO.. For a veggie, it will be steamed cauliflower with some parsley flakes on top.. For dessert, it will be some S/F jello with some heavy cream....... If I have a dessert at all.. Definitely a pot of tea to wash things down.. Quietly, we are looking forward to going back to proper eating again.. With Christmas coming, it will most likely be the same thing all over again.. Then it will be New Years Eve where we will try to contain ourselves.. That won't be bad, ....... I hope..... By then my system should be ready for .... INDUCTION.... for a while, to get back on tract...
it has only been 2 days and I already feel the difference.... If I don't control myself, I will blow up like a blimp and maybe explode.... What a mess that would make...
Today is Christmas Day and for supper we are going to our local Legion where the village comes out for a traditional turkey meal.. This is done every Christmas Day for the past (who knows) umpteen years.. Many turn out for this FREE festive meal that is made by the ladies of our community.. Everything (and I mean everything) is homemade including the desserts.. Most of the items (food wise) are donated by some local shops.. The council donates some $$$ as well to help out.. Al;though it is a Christmas dinner, they have made it non denominational..
Wow what a great idea, Steve. I love it. I am cooking roast beef and chicken for my late daughter in law's relatives. Her aunt traditionally had done this for the 10 years my son was married, and she passed quite unexpectedly this past summer. Well, everyone panicked and wondered what they would do come the holidays. Enter yours truly, and so I have decided, no big deal. Younger folks it seems just cannot be bothered to learn how to cook these days. Use either take away or ready prepared from the supermarket to be microwaved. Odd that since there are tons of cooking shows on TV.
Lois.... how lovely of you to keep up the tradition... I am truly impressed... It is a lot of work, but, in the long run, you get out of it what you put into it...
Shirley... That is fine and dandy but how am I supposed to buy those breads up here ??? We have something similar that come in 2 sizes.. 6 inch and 10 inch and both have 10 flat breads in a package.. I used to buy them to make wraps with B/S chicken breast roasted, shredded lettuce, red onion, and some ranch sauce... I stopped buying them for no reason but I will now buy them again.. You got me going !!!! I used the large ones to make pizza.. Sauce, mozzarella cheese, and anything else you like.. In the oven at 425 till done...
supper tonight was soul food again.. Meatloaf, but I made it in a muffin tin, giving individual small loaves... My muffin tin holds 12 muffins.. We had 4 each which means I have 4 leftover small meat loaves.. Steamed cauliflower ... I mashed mine and added sour cream and chives.. Stewed peaches.. Pot of tea..
Supper tonight was a casserole using minced chicken, loads of veggies, and cheese.... I love those one dish meals.... !!!!!!! Frozen blueberries with heavy cream.. Pot of tea...
Yesterday, I made cooked collards from fresh collards, and it was the first time that I have ever cooked them from fresh (as opposed to from a can). I know that all of the different greens are some of the healthiest foods that we can eat, and they provide vitamins, minerals, fiber, and protein, but very little carbs. I usually eat a lot of salads in the summertime and get plenty of greens, but not as often in the cold weather, when I want to eat something hot instead of a cold salad. I intend to get more greens into my food plan this year, winter and summer. This is what they looked like before cooking, but they shriveled down really fast, just like spinach does. I also got a packet of the low-carb wraps when we were at Walmart, so I can make sandwiches and tacos sometimes, and still keep my carbs in line.
Looks interesting Yvonne..... Supper tonight was chicken drums dry marinated and on the BBQ... sliced carrots and parsnips steamed and mashed with butter.. Stewed peach halves.. Pot of tea... Breakfast was pancakes that I made with wheat gluten flour.. S/F syrup on top..
supper tonight, New Years Eve, I made a stir fry in the wok.. B/S chicken breast cubed and marinated in honey/garlic sauce.. Loads of veggies and some vegetable stock for liquid.... It turned out fabulous...
