OK............. Breakfast was flax seed muffins that I made and served with cream cheese and butter... it made a change from eggs ... supper was B/S chicken thighs on the BBQ.. I dry marinated them first.. Caesar salad.. Frozen fruit with cream..
Sounds like you eat allot of chicken Steve ,don’t you eat red meat ? Is there flax flour ? I’ve never seen it but never looked either What about a recipe or instructions please , as I like the taste of the nutty tasting FS meal
Milla................... No, we don't eat red meat very often.. Chicken, turkey and fish are most of out meats.. NEVER pork !!!! Even my minced is either chicken or turkey.. If we eat out, that is another thing, and even then we stay away from red meat and especially ...... pork... The flax seeds I have... I have a coffee grinder that I put the flax seeds in and it turns them into a flour.. A food processor won't work.. Flax seeds come in both golden and dark.. I prefer the golden one.. I buy it in bulk and I keep it in the fridge for a long time.. I make my flour fresh when needed.. The seeds will last months in the fridge, but the flour will go bad rather quickly, even if refrigerated.. I have a recipe that I can post if you would like.... Actually there are 2 different recipes with one having chocolate in it making chocolate flax muffins.. I tried it and didn't like it.. The other that I make tastes just like bran muffins..
I do about the same as @Steve North does. I get flax seeds in a box of 4-5 lbs from Amazon, and they will keep until each bag is opened. I grind mine in the blender, and usually also add some chia seeds as well. Both have good nutrition and lots of protein and fiber, and not much carbs. You can buy the flax meal already ground, but like Steve mentions, it doesn’t stay fresh once it has been ground up. I would say that it is better than not having flax to use at all, but getting the whole seeds and grinding them as needed is much better. As far as recipes, if you look on YouTube and put in “keto” in the search along with bread/muffin/cracker or whatever, you will find bunches and bunches of recipes.
Yvonne.. I tried the food processor and they wouldn't grind into flour.. I never tried the blender but I have a coffee grinder that is perfect and I use it only for grinding up flax seeds.. I buy my flax seeds along with many other things at a "Bulk Barn" where we buy in bulk.. I keep the flax seeds in a Tupperware container in the fridge and they last forever.. Well, at least many many months.. They have both the golden and the dark, but I prefer the golden as the dark makes the muffins very dark and the taste is a bit more heavy..
Milla... We do eat wild meat as well.. We are given some deer meat and moose meat and beaver meat and some bear meat... not always in the form of minced but mostly..
Supper tonight was a stir fry in the wok.... B/S chicken breast cubed and marinated in a honey/garlic sauce for a few hours.. Onions, garlic, mushrooms, peppers, celery, and a lot of broccoli florets... I used some vegetable stock as the liquid... As usual, it was delicious and we ate the whole thing...
I'm back from a 2 day trip to Sudbury... We came home late yesterday afternoon and obviously I had nothing out for supper, but I had stopped at a supermarket to make a grocery order before coming home and I bought some chicken thighs, skin and bone on.. I took off the skin and most of the fat from 4 thighs, sprinkled them with garlic granules and seasoning on both sides.. Let them sit for a while on the counter to marinate.. Put them on the BBQ.. Coleslaw was the easiest and fastest veggie to make.. Stewed peaches with heavy cream for dessert..

Supper tonight (Monday) was fish... fillets of cod lightly breaded and dipped in egg and pan fried and then in the oven to bake... coleslaw.. Frozen fruit with heavy cream.. Pot of tea ..
Today we were out of town in Sudbury for a medical appointment.. We stopped off at Wallmart and I bought a BBQ chicken.. We had half the bird for supper tonight and also a Caesar salad that I bought as well.. Stewed peaches with heavy cream for me and frozen blueberries with cream for my wife.. Pot of tea...
