    Monday ended up being a vegetable casserole with some tuna in it...
    I love those one dish meals..
    Youcheese that i made for dessert.. This time it is strawberry..

    Either on the BBQ or cooked in a honey/garlic sauce on the stove..

    Been looking over this thread, checking out your menu. Been rather hard to do at my house. I don't cook, Wife is havig some problems trfying. She no longer sees well enough to read to read cooking instructions or recipes. Last night I had a slice of bread folded over with a spread of peanut butter and jelly between those folds. Breakfast this morning had a small bowl of oatmeal
    with a pat of Irish butter, a haalf teaspoon of silva,and a measure of half & half. Lunch today, bbq sandwich with fries. Tonight will be a boloney and cheese sandwich. Coffee this morning, tea
    at lunch, water tonight. You have a delightful avatar. I'm thinking it is someone close.

    Bill.. That is my Granddaughter.. She is all of 9 years old.. She lives in Toronto with her Mom, my daughter..
    They come up here twice a year for a few days each time.. Toronto to Massey is a 6 hour drive..

    Sorry to hear about your wife's eyesight..
    Would some of those frozen, or fresh, prepared meals be a solution for the both of you ?? At least you would have a balanced meal rather than what you seem to be eating now.. If only for one meal a day, at least.. That would take the cooking pressure off your wife...
    I didn't see any eggs, fish, or meat and I didn't see any vegetables or fruit in your post of food.... Way too many carbs...

    Just a suggestion ..............

    Today, supper was a stir fry in the wok on the stove..
    B/S chicken breast cubed and marinated in a honey/garlic sauce for a few hours...
    Onions, garlic, broccoli florets, mushrooms, celery, carrots, and sweet peppers were the veggies..
    Vegetable stock and apple juice for the liquid..
    Pot of tea....

    Breakfast today was each a bowl of porridge.. It is a bit nippy pout so I thought it might be a good idea..
    It is going down to -42c tonight...

    We did the food shopping today and by the time I came home, I had nothing out for supper...
    I took 2 of my chicken burgers that are frozen and put them on the BBQ frozen..
    I added each a turkey banger as well..
    A Caesar salad..
    Pot of tea...

    supper tonight will be fillets of fish lightly breaded and pan fried..
    Steamed broccoli with a sauce on it..
    Stewed peaches with frozen blueberries in a heavy cream with some splenda..

    Please don't laugh but I buy them in a 1/2 gallon jar at the supermarket.. They are halved, stewed, and in a natural syrup..
    A jar sells for $3.49 and I couldn't make it for that price, let alone the trouble to make them..
    Up here we don't get peaches other than a week or so in the late summer.. They are pricy as well..

    @Beth Gallagher I live in a major fruit growing area of Australia,I stew apricots / peaches / pears every year
    for stewed peaches peel ~ halve or slice add to saucepan add sugar to taste depends if your a sweet tooth on how much sugar you’d add ..I add about a ( flat) desert spoon full per peach .....add approx 3/4 cup of water ( for approx 6 large peaches ...less water if not so many peaches ) bring to rapid boil them take pot off heat let cool before adding to container to put in fridge
    Same applies to apricots
