Low Carb: What Are We Eating?

    Well, I hardly had what could be called a low carb breakfast. 2 small donuts, OJ, banana, yogurt, and 3 cups of coffee. Donuts are the baddies, but I love them with coffee. Will have an apple for my mid morning snack.

    That wasn't a low carb breakfast at all, but under these times, one must do what one must do to keep going....
    Other than the donuts, it looks OK to me...
    In my case, if it isn't in the house, you can't eat it.....
    So, I just don't bring into the house anything I must not eat...…. however ….
    When we go out (not any more) I use the attitude that …….. if you are not at home, carbs don't count...
    If only that were true....……….

    Supper tonight was fillets of salmon breaded and pan fried..
    Steamed cauliflower
    Frozen blueberries with heavy cream
    Pot of tea...……..

    Tomorrow for breakfast I will be making pancakes.. I will use wheat gluten as my flour which is a low carb flour..
    I have S/F pancake syrup and splenda brown sugar..
    Just before I put the batter in the hot fry pan, I will add some frozen blueberries to it making blueberry pancakes.. They will thaw in the cooking, otherwise, if I thaw them first, the batter will turn purple from the berries.. this way they stay whole..
    Pot of freshly brewed coffee to go with them...

    Supper tonight was homemade pizza..
    I took some large wraps, some pizza sauce, bit of mozzarella, sliced mushrooms, diced red onion, sliced pepper, and a bit more cheese..
    Baked in the oven at 450f till the top started to be golden.. ……….
    I made 3 pizzas and we both had 1 1/2 each.. They were not only simply delicious but it made a change …..
    There are NO pizzerias open these days.. Make your own...

    Supper tonight was B/S chicken thighs on the BBQ
    A turnip casserole was the veggie..
    S/F jello with heavy cream..
    NO TEA...…..!!!!

    Sunday.....
    It could be casserole time.... but … This time I would like to try something totally different..
    I will search through my recipes and look for a different one that uses chicken of some sort..
    I only have chicken or fish and fish wouldn't do it...
    I fi can't find one, I will invent one and try to make something on my own..
    How bad can it bee if you use B/S chicken breast, vegetables galore, some sauce, herbs and spices..

    Please don't ask.....……….. I ended up making a stir fry in the wok ….No casserole...
    I think I slept in too late and got lazy today...
    tomorrow, well that's another day and I shall see....

    Supper tonight was a casserole using minced turkey, a ton of veggies, and some cheese... herbs and spices..
    It was very good as we finished it all..
