Today will be fish of some sort.. Not sure what kind yet.. a salad goes well with fish especially a Caesar salad.. Pudding that I will spike Pot of tea..
I am re-starting Low Carb, so bare with me...and my questions... I have gotten into a bad of habit of having a huge snack at bedtime. I am worried about how to replace that. I usually have the savory/sweet thing at that time of day. I'll have a sandwich (or half a bag of chips!) and then something sweet, maybe a half a bag (or more) of candy or some cookies. I have a terrible sweet tooth. I've been told to just stop the habit, but I don't know if I can. I've had eating disorders in the past, and changes are hard for me. I've been trying to come up with different snacks that might satisfy me, so I'm looking for some suggestions that might help with the issue.
Eventually, the sugar craving wears off , once you are not eating sugar, and your blood sugar stabilizes. Sugar causes your blood sugar to spike, which triggers insulin to prevent it from going too high. Then the insulin causes the blood sugar to drop, which makes you crave sugar again. It is a vicious cycle. What I do is get the Atkins food bars, and if I am craving something sweet at night, I will have a half of the food bar. They are basically sugar-free, but still taste sweet and satisfy that craving. There are also a lot of recipes that you can make using almond flour (instead of regular flour), and sweetener, and can have low-carb cookies or other snacks. As the sugar cravings wear off, you will find that you crave sweets less and less.
Thanks @Yvonne Smith . I figure I will have better luck soon. I plan to try some of the sweeteners and the sugar free options. I bought some cocoa dusted almonds, but was disappointed that they were higher in carbs than I thought. What a shame. They taste pretty good, and they had been recommended to me. Oh well, I guess one or two every now and then wouldn't be so bad. I'm hoping I'll do well. I'll hang around here and read some posts. I'm sure there will be some good ideas!
I'm saving my serious beginning until Monday, but I still make low carb meals. Supper tonight will be a Spinach Mushroom Quiche, my personal favorite. It's really easy, so I'll give you the recipe. MUSHROOM & SPINACH QUICHE 1 tablespoon butter 8 ounces fresh mushrooms, sliced 4 ounces red onion, chopped fine, 1 medium 10 ounces frozen spinach, thawed and drained 5 eggs 1/2 cup heavy cream 1/2 teaspoon salt 1/4 teaspoon pepper 8 ounces sharp cheddar cheese, shredded In a large skillet, sauté the mushrooms and onions in the butter until tender. Remove from the heat and stir in the spinach. In a large bowl, whisk the eggs. Whisk in the cream, salt and pepper. Add the mushroom mixture and stir well. Stir in the cheese. Pour everything into a greased 10-inch pie plate. Bake at 350 35-40 minutes or until set and lightly browned. Let stand 10 minutes before serving. I'm going to use a regular onion, since I don't think I have a red one. Otherwise, I think everything will be as the recipe goes.
Charlene.. Welcome on here and that recipe looks good.. As far as your bedtime hunger goes, is it real hunger or head hunger.?? Most likely head hunger.. How about trying a bowl of sugar free jello.. That will satisfy your sweet tooth and give you something to eat as well.. As far as the chips goes, if it isn't in the house, you can't eat it.. Try NOT to have in the house any of those bad foods so you won't have them in front of you when you feel like a snack.. If you eat a decent supper, there is no reason to be that hungry at bed time...
Supper tonight was chicken drums dry marinated and on the BBQ.. I also added each a turkey banger (sausage) on the BBQ.. A fresh salad with my own dressing.. S/F pudding spiked Pot of tea...
Today was a casserole with all kinds of veggies, cheese, and some stock... S/F jello with heavy cream....
supper tonight will be some sort of fish.. I will see what I have in the freezer and perhaps bread the fillets and pan fry them.. Steamed butternut squash.. S/F jello with some heavy cream.. Breakfast today will be pancakes that I will make from scratch.. I use wheat gluten as my flour.. I am all out of almond flour which I like to use for both pancakes and waffles.. Both are low carb flour.. S/F syrup and butter on them.. I sometimes add some blueberries to the batter to make lovely pancakes.... Not today.. Pot of freshly brewed coffee..
