today was fillets of sole breaded and pan fried Steamed cauliflower and a sliced tomato.. Dates for dessert..
For tomorrow, I took out of the freezer some chicken legs quarters that I will remove the skin and the fat.. I will put them in the slow cooker with onions, diced carrots, parsnip, and sliced mushrooms.. I will add some frozen peas later.. I will use some stock as a liquid and add herbs and spices as well..
Supper tonight will be my homemade pizzas.. I will use tortilla wraps as a base and pizza sauce, sliced mushrooms, diced red onions, diced pepper, and loads of mozzarella cheese.. Bake in the oven at 450f till done......
Sunday...………… BBQ time... I will take some sort of chicken pieces out of the freezer... Most likely some drums.... Dry marinate them when thawed … A salad with my own dressing should go well with it.. A pudding that I will spike with something... No more tea during the summer...
Salmon fillets double breaded and fried in butter and oil.. Steamed broccoli with a garlic butter on them..
supper tonight was something a bit different.. I made my own version of hamburger helper... don't ask but we ate the whole thing.. I used 450g of minced chicken, loads of veggies, cheese, herbs and spices and it came out pretty OK... Frozen blueberries in heavy cream with Splenda.....
Supper tonight was chicken quarters (leg and thigh) on the BBQ.. I took off the skin and the fat around the legs, dry marinated them and put them on the hot grill.. Coleslaw... Sliced tomato.. S/F lime jello with heavy cream...
B/S chicken breast dry marinated and on the BBQ.. Caesar salad S/F vanilla pudding with some frozen blueberries on the bottom..
Supper tonight was something I invented as I went along... B/S chicken breast cut in half thickness.. Breaded and fried in oil till almost done.. I took diced onion, sliced mushrooms, and put them in the pan after I removed the partially done chicken.. I added some soy sauce and stock when the veggies were almost done.. I added the chicken to continue cooking and smothered them with the veggies and sauce.. Just one teaspoon of flour thickened the sauce.. Steamed broccoli..
Tonight for supper I will be making my homemade spaghetti sauce using minced chicken.. I have a spaghetti squash that I will bake and use it with the sauce.. Serve it with some grated parmesan cheese..
