Low Carb: What Are We Eating?

    Yvonne..... Something tells me that this car will be the last car of my life... It should last me about 8 or 10 years as I don't do much mileage a year.. I do about 6 to 8 thousand kilometers a year which is about 3600 to 4800 miles a year... I have a 100,000 km warranty...... I will be an old man with a beard down to my knees before the warranty is over....

    We ended up picking up a hamburger at Wendy's with a Caesar salad for supper..
    After picking up the new car, I was pooped and there was NO way I was cooking....

    Today is a working day outside.. I will be out there all day doing what I do best which is riding my tractor around and pretending to do this and that and looking very busy, but enjoying every moment of it.. I am a professional "Work all day and accomplish nothing" type pf person..

    Supper will be something simple and fast which will most likely be some sort of fish..
    I have a ton of lettuce in the garden, so a salad will go with it..
    I also have some string beans that are dark burgundy in colour.. We planted them as that.. I might steam some as well just to see what they are like.. I was told they are delicious..
    For dessert, I have some stewed peaches that I like to serve with heavy cream..
    Who doesn't like peaches and cream...

    Supper tonight was chicken legs/back attached skin and fat off..
    on the BBQ after dry marinating them with garlic granules and seasoning..
    Steamed cauliflower...

    supper tonight …………….. Fish, fillets of tilapia breaded and pan fried in butter and EVOO...
    Caesar salad..
    Frozen fruit with heavy cream....

    Sunday .. I was thinking of making a stir-fry using diced chicken breast and loads of fresh veggies..
    I know it is lots of work, but it is always worth it as we like a stir-fry...
    I have from the garden onions, broccoli, carrots, peppers, and I will add some mushrooms, and garlic..

    Today I made a casserole.. I had NO idea what I was doing till I did it.. I added a package of minced chicken (450g) and different veggies, cream, cheese, and whatever I had in the house that I was stuck with...
    it must of been good as I only have a very small amount left over...

    Today Tuesday will be fillets of sole breaded and pan fried in butter and EVOO..
    Most likely steamed carrots as I have a ton of them in the garden ready to be picked..
    I made S/F cherry jello that caught and I will add some S/F vanilla pudding on top to make a dessert..

    We had a cauliflower and cheese casserole made with 4 kinds of cheese , including cream cheese, and with chicken in it. We try not to use the oven in the summer, so I made it in the electric skillet, and it turned out delicious, and it is all low carb .

    Here is the recipe, and where it called for bacon, I used white chicken meat instead. I didn’t have any whipping cream, but used cottage cheese , about a half cup. I also added a chopped whole red bell pepper, which gave it extra flavor and a bright color.

    Now, that sounds good...….
    Almost like a vegetable casserole with some chicken in it....

    Yes. Steve, that is exactly what it is. A person could do the same thing with adding some broccoli, and whatever other veggies they wanted to put into the casserole. it is super easy to fix.
    The veggies were steaming while I was mixing up the cheeses.
    Then, just put it all together and cook. It did just fine in my electric skillet, bout would have gotten that nice brown cheesy top if made in the oven.
    We both like cream cheese, and also use it to make that Jello pudding cheesecake that I was telling you about before.
    When we go to Sam’s Club, I get their 2 lb block of cream cheese, so we have enough for making both, and anything else we want it on.

    Chicken thighs with the skin and bone in for supper on the BBQ.. I took off the skin and most of the fat before grilling..
    String beans from our garden.. They were almost black when I picked them but dark green after steaming.. tasty as they were fresh..
    Frozen blueberries with heavy cream...

    today its raining all day.. We need the rain but it is very dull and sort of depressing.. Rain is forecast for the next 4 or 5 days.. Cooler temperatures as well with the nighttime low down to 6c or around there..
    Time for some comfort food..… Soup would be perfect which I will make tomorrow, but for tonight, I was thinking of a meatloaf... I also have a spaghetti squash that I can make my own pasta sauce using minced chicken..
    Minced turkey meatloaf would be perfect for today....
