Low Carb: What Are We Eating?

    Food shopping yesterday, I bought a small load of B/S chicken breasts and they were large ones.. One breast can easily feed the 2 of us.. They were on special.. 3 breasts to a package and I bought 6 packages.. Average price for the package was about $4.00.. that is rather a good buy...
    Supper today was B/S chicken breast cut in half in the thickness and pan fried in a honey/garlic sauce..
    Caesar salad
    Seedless watermelon for dessert..

    Yvonne...……. how do you make your butternut squash..
    I steam mine and mash it with butter and chives...

    That is what we did with the butternut squash, too, except I didn’t put chives on it. Cutting it into smaller chunks makes it cook a lot faster than cutting it in half and baking it, and saves a lot on electricity, as well.

    Today, I took the rest of the chicken, cubed it up, added peppers, onions, and green tomatoes, stir-fried those, and then made enchiladas with the low carb tortillas.
    Bobby got a little oven/rotisserie from Amazon, and we used that to cook the chicken yesterday, and now baking the enchiladas in the oven part.
    The rotisserie chicken came out so wonderful that i have another whole chicken marinating , and we can cook that tomorrow or Saturday.

    Yvonne...…….. funny you had a stir fry today because that is exactly what I made for supper tonight..
    B/S chicken breast cubed and marinated in a honey/garlic sauce for a few hours..
    onions, garlic, broccoli, pepper, and mushrooms was the veggies....

    As far as the butternut squash goes, yes I cube the squash before steaming.. it goes faster.. I don't always add something to it but always some butter, salt, and pepper.. Chives, fresh dill, fresh parsley are often added as well..

    The few days I was gone, I ate everything I shouldn't even think of eating..
    Now, I feel like a blimp.. My body isn't used to eating one million carbs daily.. it sure felt like that..
    I won't even begin to say what I ate.. I was on a see food diet, I saw food and ate it..
    Now, back to the proper way of eating... No more of those junk foods...

    Supper last night was a piece of fish lightly pan fried in butter..

    Supper tonight will be chicken drums on the BBQ..
    Steamed broccoli
    Stewed peaches for dessert..

    A very light meal considering what we have been pigging out on lately..

    I had hamburger that we needed to use up (and forgot about while indulging ourselves with rotisserie chicken) ; so today we had meatloaf made with veggies and steamed broccoli.
    Lots of leftover meatloaf for snacks, and the little dogs all got some, too.

    Tomorrow Tuesday it will be raining all day..
    Time to go food shopping... I will be picking up something for supper while out.. No idea what, yet..

    We did NOT go food shopping today as it turned out to be a nice sunny day, so we worked in the garden..
    I made a vegetable casserole with tuna in it..
    Tomorrow it is supposed to rain so we will go food shopping...

    Rain and very high winds today.. perfect day for some comfort food..
    Breakfast was porridge..
    Supper was Meatloaf made with minced chicken..
    I went into the garden and picked some string beans that I steamed for supper as well..

    For breakfast tomorrow, my wife has asked me to make some flapjacks..
    Done Deal... why not do it for a change over eggs..

    Supper was fish.. fillets of sole breaded and pan fried..
    Caesar salad..
    Stewed peaches with heavy cream..
