We went to Sudbury today and ended up at Walmart where I bought a BBQ chicken.. I also bought a Caesar salad kit.. Stewed peaches
supper tonight was a stir fry in the wok... B/S chicken breast cubed and marinated in a honey/garlic sauce for an hour.. Onions, mushrooms, broccoli, red and yellow peppers…… I used stock as the liquid but I didn't have enough so I added some apple juice for the sauce...
Yvonne... I'm glad you had an acorn squash because I have one and I am not sure what to do with it.. Could you please give me an idea.. I was going to cut it in half lengthwise, remove seeds, rub in some oil and a pinch of salt, and bake it face down at 400f for about an hour like I do for a spaghetti squash..
I don’t see why that would not work, @Steve North . I usually cut it across the middle, and a little off both ends if necessary , so it can sit on the baking pan. Then I add salt, pepper and butter in the little cup that it makes. Sometimes, I add a little cinnamon and sf maple syrup, and it all bakes into the squash when it is cooking.

Went food shopping yesterday and I bought some B/S chicken breasts.. Some??? ...….right.. !!!!! They were on special with 3 large breasts to a package so I bought 10 packages.. It worked out that a package of three breasts was average priced at $3.00... That's average $1.00 per large breast that one will serve two of us.. Now, If that isn't a real bargain.. Tonight I will be making..... (you guessed it) chicken breast cooked somehow.. Definitely NOT on the BBQ as it is raining quite hard.. In a pan with sauce or something.. I will bake that acorn squash S/F pudding spiked with something and made with lite cream (10%) instead of milk.. Pot of tea after all that to wash down the..... whatever...
That acorn squash was great.. Its the first time I make it and my Princess (wife) just thought it was one of the best veggies I have made.. Very tasty.. She even asked me to buy another one next time instead of butternut squash.. I cut it in half lengthwise, seeded it, put in a bit of EVOO, salt, and pepper, and baked it at 400f upside-down for about 45 minutes, then scooped out the insides in a bowl, sprinkled on top some fresh parsley chopped, added butter and served it just like that... Next year, we will try growing some in our veggie garden.. This one was given to us from a friend in the village..

today I was lazy in the kitchen.. I made a simple casserole with minced chicken, veggies and a sauce...that's all..... Stewed peaches with heavy cream...
burgers on the BBQ... My pre frozen minced chicken burgers on the BBQ frozen.. Each a turkey banger as well.. A fresh salad with my own dressing.. Frozen fruit with heavy cream..
