Soul food tonight... SOUP that I made some time ago and is in the freezer.. Vegetable soup.. Lousy out there with 3cms of snow overnight.. Today it was -2c as a high..
Tonight I did something a bit different... I took some chicken drums, put them in the slow cooker over a large bed of sliced onions, added chopped celery, sliced steamed carrots, fresh chopped garlic, stock with added soy sauce, Worchester sauce, herbs and spices.. cooked for 6 hours on low and I added a good handful of frozen peas at the end.. It turned out delicious.. A very healthy meal and quite simple to make.. Stewed peaches with heavy cream for dessert.. Pot of tea....
I took out of the freezer a package of minced chicken... What to do with it is another thing.. I was thinking of a meatloaf but in a muffin tin to make individual loaves.. I have a ton of turnips from our garden that I will cube one, steam it, and mash it with some chives and butter..
Supper tonight will be (for a change) a … BBQ.. Weather isn't bad.. I have a package of drumsticks that I took out of the freezer, and I will lightly dry bread them and BBQ them.. Diced turnip and steamed with butter and herbs.. Turnip from our garden.. S/F pudding spiked with something.. Most likely vanilla spiked with instant coffee.. Pot of tea...
This morning I thought I’d try a new low carb recipe ( to me ) pancakes .... The pancakes were 25 g rolled oats ..100 grams unflavoured yoghurt , 1 egg , 1med banana I have a NutriBullet so I put it all in a blitz till smooth cook as usual mind you they are pretty soft / light so a little flimsy to turn over It’s from a Aussie place called the CSIRO research they say their diet is proven if you follow it you will loose weight ..... I look at a sort of follow the diet however I’ve followed a low carb diet for years so I find their recommended food way to much for me to eat so my weight never changes despite being pretty active My Apple Watch recorded 7.5 klm of walking yesterday some of it was just around the house but we did do a 4 klm brisk walk down the beach
Kate...… I make pancakes all the time and they are low carb.... I take 3 bananas and mash them.. Add 3 eggs.. Add one cup of milk (I use some fruit juice or even water) Add 1 cup of wheat gluten flour or almond flour (both are very low carb).. Add some sugar substitute (I use Splenda) about 1/4cup.. Add a splash of vanilla.. Mix everything.. let stand for a few minutes and put the batter in a fry pan with melted butter...………………. ENJOY !!!!……..

We had chicken vegetable soup with the leftover chicken from yesterday, and I had romaine salad. Hot cup of spiced tea, and also watching for election news tonight.
Homemade pizzas.. I took 3 large tortilla wraps, added pizza sauce, sliced mushrooms, diced red pepper, thin slice of tomato, mozzarella cheese and bakes them on a cookie sheet at 430f till done...
