Low Carb: What Are We Eating?

    We've started an Atkins-like diet. It was my wife's idea but since she does the cooking...

    We did Atkins several years ago before they changed it all around. It was working very well, particularly for me, although I did come to crave things that had never been all that important to me before, like bread. Our daughter came for Thanksgiving before she was to do her first tour overseas so we went off of it to celebrate Thanksgiving and an early Christmas, while she was here. Afterward, we went back on Atkins, without cheating, but didn't work at all.

    I'd post my last meal but I'm not sure what to call it. It was kind of an enchilada thing but without the tortilla.

    Ken.. call it what you like, as long as the end results are keeping it low carb...There are hundreds of fabulous recipes in the low carb recipe section to check out.. Basically staying away from the 5 high foods will do it..
    They are:-….
    Flour of any kind and anything that contains any flour... Bread, cakes, tortillas, pasta, ….
    Sugar and anything that contains sugar... Any sugar substitute is used instead.. Personally, I like Splenda..
    Rice and any thing that contains rice of any form..
    Potatoes and any form of potatoes..
    Corn and anything that has any form of corn....

    Eat lots of protein such as meat, foul, fish, cheese, eggs, and all the veggies you want..
    C'mon... There's lots of good food to eat..

    Do NOT try to go low calorie and low fat.. Use real butter and regular foods, NOT fat free or light foods.. Use whole milk and cream in your coffee..
    Other than those foods,..... GO FOR IT AND EAT,DRINK, AND BE MERRY.... as you lose weight..
    Remember, I am on maintenance and have reached my goal.. My version is a bit different …

    Low carb isn't a diet but a food plan.....

    Ken, like is always say...……..

    I must have my head examined.. It was -28c and I made a BBQ.. A real gluten for punishment..
    B/S chicken thighs dry marinated on the BBQ..
    A salad of mushrooms, onions, scraped carrots, and tomatoes.. different but not that bad.. I won't do it again..
    Stewed peaches
    Pot of tea...

    Please don't ask me if I am OK..... I made another BBQ in this cold spell we are having..
    My homemade minced chicken burgers on the BBQ..... Each a turkey banger (sausage) as well..
    Steamed cauliflower with sesame seeds..
    S/F chocolate pudding spiked with some peanut-butter and served with heavy cream..

    A friend came by last night to give us some freshly caught Rainbow Trout .. We definitely have enough for 2 good meals.. The fish is super delicious when pan fried in just a wee bit of butter.. Ice fishing has been extra good this year.. I was also told he has for us 2 lovely hunks of Beaver meat that I accepted with pleasure.. Frozen of course.. He is the one that often brings us Bear meat especially bear steaks.. Another delicacy..

    Well, fish for supper tonight for sure.. Fillets of Rainbow Trout..

    I keep on seeing on Facebook about a recipe to make a dessert using only 3 ingredients.. I was curious and I tried it tonight...… What a total disaster it was... don't even bother... it was awful … !!!
    it goes like this.... 1/3 cup of instant coffee.. 1 cup of sugar (I used Splenda).. 3/4 cup of cold water... Mix with hand mixer till it gets into a mousse and enjoy...…………... FORGET IT !!! its lousy...

    Fresh caught fish again tonight for supper.. PIKE made into boneless fillets..
    Steamed broccoli
    S/F spiked pudding..
