We are actually feeling like spring, and summer on the way today ! Bobby and I both were thinking about packing away some of the heavy winter sweatshirts and sweatpants . It is supposed to be 80+ the next couple of days ! Today, I made my first iced coffee for the season , too ! I got out the big Vitamix and soaked almonds overnight last night, and then today, I made almond milk, and flavored it with a little of the powdered coconut milk that I got on Amazon last week. Both are very low carb, and even though I don’t like almond milk as a creamer for hot coffee, I think it is great for making a low carb iced coffee drink. I added some protein mix (also low carb) and a nice big veggie salad, and that was my dinner today.
Tonight for supper again I didn't take anything out of the freezer for supper.. Totally forgot !!! Very late afternoon, I panicked and ended up taking out of the freezer, at the last minute some of my frozen chicken burgers.. They are just over a 1/4 pound each.. I make them real burgers.. I added each a banger as well to go with the burger.. Butternut squash steamed, mashed with butter.. Frozen blueberries with heavy cream..
Tonight for supper I will be making a spaghetti squash with my homemade pasta sauce.. A small side salad to go with it.. Dessert.... Well, we will see but as now, nothing other than the frozen fruit we often have... Pot of tea after all that... Breakfast: 3 egg omelette with turkey bacon for my wife.. 3 scrambled eggs for me.. Pot of Folgers.. Lunch...... NOTHING !!!! as usual..
@Steve North ...I have wanted to ask this but am fearful as to how it may sound...so don't hit me. Is there in indication that you and your wife's eating habits played any part in her heart attack ? Or is it caused by some genetic issue ? Because of the higher fat and lower carb eating had just wondered if was a problem.
Gloria... My wife has NEVER had a heart attack and to date, her heart is in perfect shape.. I am wondering if you are mixing her up with someone else... We do get tested annually for heart (EKG) and we both are healthy..
Gloria................ Please don't worry about it.. As long as we can continue to make mistakes, we are in good shape... I make them all the time.... C'mon.... When you stop making mistakes, you are in BIG trouble....
Supper tonight was very good and very bad... The spaghetti squash I made was extremely good and the salad on the side was also good... There was wayyyyy toooooo much food for the 2 of us... Don't ask as we ate the whole thing and now 5 hours later I am still feeling like I will burst open...
Today, Thursday, we have a medical appointment in Sudbury for my wife.. Just a follow-up with a specialist.. Nothing urgent.. Sudbury is about 90 minutes away from our house.. By the time we finish the doctor's appointment which is at 1:30pm and do a few shopping places, it will be suppertime.. We will eat out somewhere (Sudbury has a population of just over 1/4 million), and after supper we will go to Wallmart, then home.. We won't get home till approx.. 9:30pm or even later.. What I often do is buy a BBQ chicken at Wallmart and that is good for 2 meals for us.. A day out like this is really appreciated by us as it breaks the "Cabin Fever" from being cooped up in our village all winter long........
BBQ chicken that I bought yesterday at Walmart.. There is enough there for us to have each 2 meals. I will make a salad to go with it... A dessert for sure of S/F white chocolate pudding served with whipped cream...
Please don't laugh, but... Tomorrow (Saturday) we will go do our weekly food shopping and get home for supper... You bet..... BBQ chicken again.. That chicken was big enough to feed us for tomorrow and another time.. normally we would eat out but I have the chicken and I really like it.. I zap it in the microwave to heat it up and it tastes delicious..
@Steve North ..it is leftovers ,nothing wrong in that. our dinner was not low carb per sae. George Foreman grilled chicken, mexi corn, with asparagus, boxed angel hair pasta with garlic and herbs. I am weighing and measuring things, so try and keep portions small. .
