No Gloria, that meat surely wasn't low carb... The BBQ chicken is OK to eat a second time as long as it is warmed up a bit.. Like I said, some leftovers are OK but most are not..
I am making a cauliflower salad (like potato salad, but made with cauliflower instead) and cooking some chicken to go with it for our dinner today. I will chop up some romaine and spinach greens to put the cauliflower salad on, so we get extra greens in our meal. The cauliflower salad is made and in the refrigerator chilling . We will have lots of it, and since we enjoy leftovers, this is a good thing in our house. A salad can go with almost anything.
It will be bacon and eggs tonight, as this is the last Saturday my wife has to work two jobs. Bacon and eggs are our usual Saturday supper during tax season since I never know when she will finally be home. I cook the bacon in advance, then wait until she calls me informing me that she is on the way home to start eggs.
I make the faux cauliflower very often.. I steam the cauliflower not too soft but done, mash it down till it looks like rice, add sour cream, herbs and spices and serve... Very pleasant..
Supper tonight (Sunday) will most likely be the end of that HUGE BBQ chicken I bought at Wallmart... its about time !!! For a veggie, I will make something steamed like broccoli or cauliflower.. For dessert, I will make a S/F butterscotch pudding that I will spike somehow.. Breakfast... Pancakes that I make using wheat gluten.. I can also use almond flour but I don't have any at this time..
I was reading a summary of a university study that has discovered (due to the high number of people on Paleo diets these days) that some people on high protein diets actually have high blood sugar (hyperglycemia). It has been tentatively been traced to certain amino acids in the diet. I don't know if anyone here has the means to routinely check blood sugar, but I was wondering if anyone had experienced this phenomenon.
Don... Funny you should mention that as I do keep on top of my blood sugar.. my wife is a diabetic and takes her blood twice daily.. I often ask her to take mine just for fun, and it is NEVER above normal.. On the other hand, since she has been on low carb, she has reduced the amount of insulin she takes, as well as one injection a day less.. Her numbers are getting much better since her low carbing started.. Beth... The carcass is long time gone.. I will be making chicken soup towards the end of the week for Passover so I will keep some as stock.. I will also freeze some chicken soup to have in case we get ill again.. Jewish penicillin is what chicken soup is.. Good for what ails you..
Omg...help! I made my first almond flour pancakes this morning. https://www.allrecipes.com/recipe/234702/quick-almond-flour-pancakes/ First wish I had read reviews first so I also could have tweaked them. I ate one right after cooked..not bad but would tweak next time. It made 5....I ate them all except for one ! It does not say how many are a serving ..I assume 4? Anyway, I am very full and may never eat again today! I feel like a piggy. I was trying to hurry and make because needed to take my meds and need to eat first. Tell me how you would tweak this recipe and if you have any clues as to what us a serving?
I actually had a similar breakfast this morning, @Gloria Mitchell . I made almond flour “flatbread”, and had that with an egg scrambled with some shredded cheddar cheese. I actually got full before i was finished, so I am saving almost half of it. As far as your pancake recipe, I would suggest adding some baking powder so the pancakes will rise better. My flatbread mixture would also have made a nice pancake, and you can make the dry mix ahead of time, and then just scoop out the 1/4 cup servings. To make the flatbread, I used 1/4 cup of almond flour/meal, 1/2 tsp baking powder, 1 Tbsp coconut oil , and one egg. I mixed everything together and cooked it in one of the new non-stick ceramic frying pans, turning it like you would turn a pancake. Then , I scrambled my egg, and put that on top of the bread, and ate it like an open-face breakfast sandwich. The 1/4 cup of almond flour is 3 net carbs, and no carbs in the coconut oil (you could also use butter instead), and 1. Carb for the eggs and cheese; so my breakfast was 4 grams carbs, I use an app called Carb Manager to keep track of what i eat, and I like it much better than My Fitness Pal, which I also have.
Here is the youtube video for making the almond bread mix. This is pretty versatile, and can be either microwaved into kind of an English muffin, or cooked in a non-stick skillet like a flatbread. Depending on what you added to it, you can have a breakfast bread (bits of dried raisins or blueberries and sweetener), or maybe add oregano and Parmesan cheese for more of a sandwich or dinner bread. I forgot that I added 1/4 cup flax meal to the mix, so there was probably a Tbsp of that in my flatbread, but since flax has as much fiber as it does carbs, it balances out to 0 net carbs.

I try to stay under 20 net carbs, and around 1000-1200 calories, with most of my calories coming from either protein or fats. Carbmanager will actually set all that up for you once you program in your information , or you can decide yourself what you want your macros to be. I usually have one main meal around mid-day to early afternoon, and then something small and low-carb to eat if i am hungry at any other time. We will be heading off to the fitness center next, where I will swim for an hour and burn up around 600-800 calories, and then I will make a large salad with lots of veggies in it for my midday meal when we get back home. Bobby eats totally different than i do, since he is a bodybuilder, and he can have a lot more carbs and proteins than I can because he is doing the strenuous exercises. Because of this, we often just each make whatever we want to eat, and have separate meals; so he will have something with heavy protein and carbs while I am having my salad and veggies. I have “fallen off of the wagon” this last winter, gained back all of the weight that I lost before, and now want to get back with the program and get rid of this extra weight again.
I don't diet anymore...I rather make life style change, as diets only last while your on them. I do realize you have been doing this for long time,it works for you. I am merely cutting carbs from Lord only knows how many..to 169..per My Net Diary. At some point may go lower. In the mean time want to try cutting carbs also by cutting our flour and other things. Keep up the good work and stay strong
I just brought it up, @Steve North since there MAY be that link with the amino acids. I was also reading a new theory concerning the "Dawn Phenomenon", if you are familiar with that. Some researchers now believe that the Dawn Phenomenon is a type II diabetic on a very low carbohydrate diet is actually a good thing. It may indicate that the liver, particularly a fatty liver, is purging itself of fat and actually healing. Prior thought was that the sugar was poorly-controlled and medication was increased to compensate as has to be done in type I diabetics. I don't want to get too technical here, but you can find it on the 'net if you are interested.
