Yesterday I made something I don't make very often.. My own pasta sauce using minced chicken and many other items including herbs and spices..... I ended up with quite a large pot of sauce which I have lots of leftovers to either freeze or use it up in a different way in the coming days... To go with the sauce, I made a pot of spaghettini (thin spaghetti) which again I have some leftover.. Yes, I don't make pasta often but it came upon me and I did it.. It was excellent but just a slight bit too spicy to which we ate it anyway.. Naturally we both pigged out on the dish.. Actually I ate way too much and felt it later.. Bloated and full.. With the remaining pasta, I will make a frittata for my breakfast today or tomorrow.. Add a few scrambled eggs and some sliced mushrooms in a fry pan over the warmed up pasta and let it cook very slowly till cooked.. Add some mozzarella cheese and place under the broiler to cook till lightly brown the top... Believe me when I say that a pot of tea was very appreciated after a huge meal like that...
Supper tonight for me was again some more of the pasta I made last night.. Again I ate too much.. For my wife I made some tilapia fillets, breaded and pan fried.. She wanted steamed and mashed carrots.. A pot of tea was again very welcomed..
We went to Sudbury and of course we went to Walmart and I bought a BBQ chicken.. I also bought a Caesar salad kit which we enjoy.. That chicken will feed us for 2 meals, and then some.. A pot of tea after supper is always appreciated.. It helps digest the supper..
Tonite we are trying a keto pizza recipe with cauliflower crust. We tried keto bagles but they were mostly cheese and tasted like it.
Cauliflower crust is not bad, but some of those low carb breads are not very tasty.. Much better off not eating bread..
Soup.... homemade soup that contains lots of different vegetables as well as some meat that a friend brought us.. It was super delicious..
fish.... fillets of haddock breaded and cooked in a buttery lemon sauce.. A salad which I like very much.. A sliced banana with heavy cream and I added a few frozen blueberries as well.. Pot of tea..........
Today I am going to attempt in making some kind of stew in the slow cooker.. I took out 4 large chicken drums that I will put in the slow cooker on top of a layer of sliced onions, I will add a can of diced tomatoes with the juice, diced carrots, string beans, diced potatoes, corn, and frozen peas.. I will then add some herbs and spices and let it cook for several hours on low.. I will serve this on a bed of some small pasta like shells or elbows.. If the liquid is too loose, I will thicken it up a bit.. if it is short of liquid, I will add some stock and then a bit of thickener.. Thickerish sauce is best.. Will it be good??? I have no idea but I will taste it as it cooks and add more flavour as it goes along.. This will be a meal in one with no other veggies required.. I have a frozen pie shell that I will thaw, bake, and fill it up with a custard I will make.. First I will put some sliced banana on the bottom, then the custard, let it sit in the fridge for a few hours, and serve it with homemade whipped cream that I will add some red food colouring, as it is Valentines Day.... A pot of tea will be lovely after this meal..
My concoction turned out not bad but not that good either.. Somehow I was short of some taste to which I added some soy sauce but that wasn't enough.. We ate it but still short on taste.. There are leftovers and I will try to add some more herbs to it.................................... Ha Ha !!! Ketchup always does the trick !!!! .........
@Steve North I’d had very bland meals by trying to cook a stew in a slow cooker when I first bought one many years ago The solution is to cook / brown the onion / celery / and carrot first. It gives you a nice savoury / vegetable broth as a base for stews or soups ( if you’re using those veg) as well as partly cooking / browning the meat / poultry what ever meat base you are using . I do the same if I’m cooking stews or casseroles on the stove top ,I always cut up my carrot / celery / onion and partly cook , then remove veggies and brown meat / poultry . To me a stew or soup is bland without those veggies unless of course you want to add and or prefer the tastes of bottled sauces that are often full of salt and sugar .

I finished that slow cooker concoction that I made a few days ago.. As I was reheating it up, I added some soy sauce and it came out pretty good as I ate the whole thing.. It was definitely short of some flavour to which soy sauce did the trick.. My wife wouldn't even think of having it, so I took a B/S chicken breast, made a butterfly, breaded it, and fried it in EVOO and butter..
