Low Carb: What Are We Eating?

    I went food shopping yesterday and when I came back home, unloaded the groceries, put them away where they belong, I was totally pooped and the next thing was to make supper.....
    I ordered a large vegetarian pizza with thin crust from our local pizza place..
    Way too pooped to even think about cooking supper.. We have some pizza leftover for another meal.. I will reheat the slices in the oven and it will make another pizza night.....

    Turkey sausages that were frozen and I boiled them first and then put them in a skillet to brown..
    No BBQ as it is way too windy and the temperature is -29c.. That gives a windchill of about -40c..
    Steamed parsnips and carrots, mashed with butter and chives...
    A clementine for dessert..

    Fish again... We eat fish about 3 or 4 times a week..
    I buy frozen fillets of Haddock, Tilapia, Sole, and Salmon.. I tried Cod but we didn't like it...
    Steamed carrots and parsnips smashed with butter..
    S/F jello with heavy cream..

    The steamed parsnips sound nice @Steve North however it would cost about $15 to buy enough parsnips to make a mash here as they are around the $20 a kg
    I might try growing some in my raised garden bed this coming winter

    Parsnips here are huge and there are 4 to a bag for $1.99..

    We went to Sudbury and I bought a BBQ chicken at Walmart which lasts us for 2 meals..
    I like the dark meat and Annmarie likes the breast.................. A perfect marriage ....
    I also bought a Caesar salad mix which we had with the chicken..
    Lots of food there, so no dessert..
    Pot of tea for sure... We like out tea after a meal.. It helps digestion..
    We don't drink any beverage that is carbonated,,,

    We grow parsnips here that are huge too. They are so sweet after we put them in cold storage for a couple of weeks, I can't believe they are low carb.;)

    FISH !!! Fillets of Tilapia lightly breaded and pan fried in butter..
    Steamed carrots and parsnips mashed with butter and chives..
    S/F strawberry jello made with heavy cream and a strawberry on the bottom of the container..

    Your going to love this..... There was a special at our supermarket on frozen Tilapia fish fillets.. They were large fillets individually wrapped and 10 fillets in a bag which weighed 1.5kilo for $7.99 a bag...
    Please don't ask ................. I bought 6 bags of the fish and put them in our large freezer..
    I have enough Tilapia fillets to last me an awful long time...

    Supper last night.......... You guessed it !!!! ...... Tilapia fillets .....
    I breaded them and pan fried them in butter and EVOO.. I added a sprinkle of lemon juice while cooking..
    A Caesar salad was the veggie..
    Frozen blueberries with heavy cream.. Let the berries freeze the cream and you have blueberry ice-cream..
    Pot of tea was very welcomed after all that...

    Sooooooo jealous. I love tilapia. The ones from China taste like dirt to me but the new supplies from South America are scrumptious. We can get them fresh at a local store sometimes and I usually buy them all if I find them. But they are much more than you paid.:(

    My homemade chicken burgers on the BBQ.. I put them on the BBQ frozen..
    Fried onions, steamed carrots and potatoes mashed with butter and parsley..
    Frozen blueberries in heavy cream..

    OK. So today we are trying a mashed cauliflower recipe with chicken tenders and fresh asparagus.

    Mary... I often steam cauliflower, mash it, and add sour cream and herbs..

    B/S chicken thighs on the BBQ that I slightly dry breaded first..
    steamed string beans.. sliced tomato ...

    It was surprising. the texture of mashed potatoes. We added cream cheese, crumbled bacon, diced onions and our best shredded cheddar cheese.

    Last night, instead of cooking, we ordered a pizza..
    A large vegetarian pizza with thin crust.. Naturally we have leftovers for the next day..
    It was like a day off from cooking for me...
