Low Carb: What Are We Eating?

    Fish again..... We eat fish at lest 3 times a week.. I buy the frozen fillets of different varieties..
    Sole fillets lightly breaded and pan fried in butter and lemon juice..
    Steamed cauliflower with fresh parsley onb top..
    Plums and cherries for dessert..
    Pot of tea.........

    Got lazy ..................... ordered a pizza ........... A large, ...... thin crust, ..... vegetarian..
    That will last us for 2 suppers..

    That meatloaf served us for another meal.. I made a sauce to go over it and served it with some peas and steamed string beans...
    I made a zucchini loaf with raisins which we had for dessert..
    Pot of tea..

    Yogurt as a snack................ With some zucchini loaf of course....

    How do you make a zucchini loaf? Is it like the bread? I have made zucchini bread a least 5 times in last few months and still have zucchini overflow.

    Yes, zucchini loaf is a bread but it has raisins and sugar to make it a sweet bread like...
    I use brown sugar instead of white sugar for a good flavour...

    Okay same thing. I have used brown sugar before. I used walnuts and rasins in mine...so good.

    Raisins, yes.... Walnuts, NO as I can't have anything with nuts since my stomach operation...

    Turkey bangers on the BBQ,,,
    Zucchini on the BBQ and peas as well..
    A clementine and then later some frozen blueberries with heavy cream...
    No tea as it was way too hot but we did have a glass of fruit juice, apple juice..

    fish tonight.. fillets of Tilapia, lightly breaded and pan fried in butter and lime juice...
    Steamed and buttered potato pieces... peas...
    zucchini loaf that I made with raisins..

    I am making my first trial batch of zucchini chips in the dehydrator. I love chips and HUmmus or chip dip, but regular potato or corn chips are so unhealthy, as definitely NOT low carb; so I decided to try making the zucchini chips and then I can have them with either hummus or yogurt dip.

    Yvonne... That sounds just great.. I also have lots of zucchini that I don't know what to do with.. I don't have a dehydrator machine.. What I have been doing is making zucchini loaves and freezing them..I will end up giving them away.. Some of my zucchini are rather large.. I take out the seeds before grating them for my loaves..
    I also like zucchini on the BBQ.. It is really delicious..

    They turned out pretty good, @Steve North ! I need to slice them just a little thicker if i want to use them to dip in something, but just for snacking, they are fine, and are basically just a seasoned raw zucchini that has been dehydrated, so they still have all of the fiber of a raw veggie.

    Steamed large cubed red potatoes with butter and parsley flakes... steamed broccoli...
    A piece of one of the zucchini loaves I made with all those zucchinis I have...

    We went food shopping today and i came back home totally tired.. Way too tired to cook anything, so I ordered a pizza for supper.. The lazy way out but i had little choice.. Pooped out !!!
    A large vegetarian with thin crust which will last us for 2 days supper.. We each had 2 pieces.. Half the pizza..
    I bought some clementines which are super sweet and juicy.. That was our dessert
