Low Carb: What Are We Eating?

    I went food shopping today and by the time I came home, unloaded the groceries, put them away in the fridge and freezer, I was totally pooped.. There was NO way I could even think of cooking supper.. Yup, I ordered a pizza.. A large vegetarian with thin crust.. Now we have enough for supper another time as it had 8 large slices.. Each 2 slices is a good meal.. Half of the pizza is left over for another meal..

    Don't get me started, I'm drooling already.

    The closest thing I've allowed myself for a while is: a slice of toasted previously frozen bread (both freezing and toasting are supposed to help alter the carbs to slow metabolizing them) with unsalted tomato paste spread on it, a few herbs sprinkled on and a slice of Gouda or Mozzarella. Then a quick trip in the microwave to melt that just a bit.

    Actually not bad. No pizza, but with all that I've cut back it counts as a treat here.

    When I was on induction low carb, I made my own pizza at home...
    I took some mozzarella cheese, shredded it, put it on a cookie sheet in a circle, added to it some pizza sauce, some sliced mushrooms, and green pepper slices.. I baked it till the cheese made a sort of a crust and.... VOILA... a pizza....

    Naturally supper tonight was the leftover pizza which I reheated in the oven..

    Turkey sausages on the BBQ... Even if it is cold out, I still BBQ.. As long as it isn't windy..
    Baked potato, pureed carrots, peas...
    Clementine, and pineapple bits..

    B/S chicken breast pan fried on a honey/garlic sauce.....
    Baked potato, steamed broccoli, pureed carrots...
    A banana for dessert..

    I made a meatloaf using minced chicken last night.. I added some ketchup and herbs and spices with some breadcrumbs and it came out very good.. Naturally there is some left over for another meal for us..
    A large baked potato that we shared, peas..
    A banana sliced, pineapple tidbits, blueberries, and clementine segments made a sort of a fruit salad for dessert..

    I made these a few days ago ….i call them eggplant pizzas @Steve North
    They are sliced slightly cooked 3/4 inch eggplant …then topped with a little pasta sauce , a bit of cooked bacon / oinion / tomato/ capsicums
    parsley and topped with grated cheese they were delicious ,and most of most of the ingredients are from my garden with the exception of the bacon and cheese

    I was never a lover of eggplant mainly because I don't know what to do with it..
    This looks good, but does the eggplant end up mushy??

    It does, like tomatoes would if you baked them. The skin holds them together.

    We had a broccoli and cheese with sausage scrambled egg this morning, and it was a good breakfast and filled us both up.

    Supper tonight was chicken thighs bone in, dry marinated and on the hot BBQ they went..
    A large baked potato that we shared, steamed carrots pureed, and steamed broccoli..
    A banana with yogurt..
