Low Carb: What Are We Eating?

    I tried something new for me, ......... but not new...
    I made a ... Sheppard's Pie... using minced chicken, a bit of corn, onions, herbs and spices..
    Covered with a layer of mashed potatoes and baked in the oven.. It was good but we found it a bit too loose.. I thought the bottom should be like a meatloaf, .... solid..
    Steamed diced carrots and peas..
    Pineapple tidbits in yogurt..
    Pot of tea well appreciated after that disaster..

    FISH ..... Fillets of salmon pan fried in butter and oil..
    Baked potato, steamed broccoli, pureed carrots..
    Clementine..

    Swiss steaks... I took minced chicken, added egg, herbs and spices, a bit of stock, and oatmeal..
    I then made patties and put them on the BBQ......... Awesome !!!
    Served them with caramelized onions..
    Baked potato, pureed parsnips and carrot with butter and parsley flakes..
    No dessert as we were too full...
    Pot of tea for sure....

    I was in Sudbury on Wednesday and I went to Walmart and bought a BBQ chicken..
    It has lasted us for 2 meals so far and there is still lots left for another meal for us..
    The first night I also bought a Caesar salad kit..
    Second time I made a baked potato and steamed broccoli..
    S/F jello with fruit in it for the first night..
    No dessert the second time..
    A pot of tea is always welcomed after any big meal..

    I eat Strawberrys and blueberry's and grapes for that, I buy enough to last for a month. I clean them put them in freezer in small glass containers, take out when needed,
    I seldom eat other carbs unless I'm ready for a more intense workout.
    I've never taken insulin and metformin hurt my stomach, so for 15 or since I had diabetes, no meds.
    I know I may not always be able to work out, then I'll take meds if something else doesn't get me first.

    Supper tonight was a new concoction I made..... Actually I invented it..
    I had some leftover BBQ chicken that I bought at Walmart a few days ago.. What to do with it??
    I made a chicken, vegetable casserole that I just put together by chance..
    I took a can of cream of mushroom soup, put in a large bowl, added a sliced onion, frozen peas, diced carrots and a diced red potato (that I steamed to cook).. I cubed the chicken breasts and added them to the mixture.. I found it a bit too dry so I added some plain yogurt.. I added some herbs and spices for flavour, put the mixture in a baking dish, added some bread crumbs on top and baked it in the oven at 375 for about 45 minutes.. It came out extremely delicious.. there is enough left over for another meal for us..
    A pot of tea after was appreciated..

    Today I made a lovely meat loaf using minced turkey.. what a difference using turkey..
    It came out very good and there is enough for another meal for us..
    A large baked red potato that we shared and,
    some carrots and parsnips steamed and pureed with butter..
    S/F vanilla pudding served over a bed of pineapple bits..
    Pot of tea..

    Today we had the balance of the casserole I made a few days ago with the remaining BBQ chicken..
    There was lots there and we ate lots, but finished it..

    my burgers I made with minced turkey and froze..I put them on the BBQ frozen..
    I never have buns with my burgers.. Just plain.. They are about 1/3 of a pound each..
    Baked potato... fresh salad..
    Frozen blueberries with heavy cream..

    Sausages on the BBQ.. I like turkey sausages that our local shop makes..
    Steamed broccoli, steamed carrots and parsnips pureed with butter..
    Pineapple tidbits over cottage cheese..

    Our friend living in our village just brought us some chicken stew that she made..
    We had that for supper and it was a real treat not to cook for a change.. Naturally, it was delicious and we ate like a couple of pigs as we finished it all.. Homemade country cooking is always great..
