    It’s only 8.50 am here on Thursday :)
    So I haven’t had lunch ..but rarely eat lunch However this is the first day home at lunch time since last Sunday cause we’ve been out socialising with friends in the lead up to the silly season

    Wendy's Chicken Caesar Pita knock-off:

    Lettuce and diced chicken breast topped with shredded Parmesan cheese and Caesar dressing rolled up in a flour tortilla or pita bread.

    I made the best chicken noodle soup yesterday with some leftover rotisserie chicken.

    I think that's what I'm gonna do. I'm gonna take the carcass, the bones, the gelatin, etc and cook it all down in some canned broth with carrot/celery/onion to make the base.

    I just finished up the last chicken they bought me...made some quesadillas with it. Those make a hot, light, tasty dinner.

    You were ready my mind, as you can see!!

    I've done the same thing when making chicken & gravy with it...boil dat carcass to make the base for the gravy.

    I like having "real" chicken stock in the freezer. I used the last of mine yesterday and had to supplement with Swanson's. The soup still turned out well.

    I use onion, celery, carrot, and carcass... but I boil it all in water, strain, skim, freeze. I usually make green chile chicken enchiladas with leftover RC, but it's handy for so many things.

    Not long after I moved here, my small church did a 7 course Christmas meal for 50 people. I made Chicken Divan. That's when I bought my small chest freezer (and a supply of carryout soup containers), because I made stock with all that chicken I cooked.

    When I would go shopping after work, I usually did not feel like cooking since my evening was already half-gone. Rotisserie chickens have been such a great addition for stores to offer...most of dinner is already done for you, and it's so much better than fast food.
