I have a recipe for pork chops fried in butter, then you add more butter to the drippings, add an equal amount of honey (eyeballed), then heat pecan pieces in it and spoon over the chops. Very easy and very tasty.
I came across a serving of smoked pulled pork leftover from dining out (Texas Roadhouse), so I got some homemade queso & refries from the freezer, heated it all together, melted a Mexican cheese blend on some hot nacho chips, spooned my concoction top, and threw it under the broiler. Then I put salsa on top. Another delicious meal I shall never accurately duplicate...but it sure was good.
I had to double-dip on my replies to this. I just commented on the leftover Texas Roadhouse pork I had for lunch,and I got one of those fully loaded sweet potatoes with my meal, except it came with miniature marshmallows. The potato was good but I had to scrape all that sugar off the top...it was too much.
I drove into Richmond to pick up parts for my wood stove, so while I was out that way I found a Vietnamese restaurant that serves Pho soup (there are none in Charlottesville, much less in my county.). I've not had any since I left the DC area in 2010. It was so very good. Had a couple of spring rolls with it. I'll go back...it's only a 30 mile shot straight out the interstate.
It’s not lunch time yet it’s only 8.30am ( Saturday ) if I have anything it will be a few teaspoons of yoghourt cause I’d ran out of yoghurt this morning and I’ve just been to the shop to buy more
It is our dinner/supper meal, and something that I have never tried before, called Hopping Johnny (or something like that). I had some red field peas, and no idea about cooking them; so naturally, I looked on youtube, and that was one the first recipes that I found. It is basically the field peas , which are like black-eyed peas, except red like a kidney bean, and some veggies, and then you add rice to it. It comes out thicker than just a pot of beans, you can eat it with a fork, and I enjoyed it. As usual, I made more than we needed, so the dogs will probably be trying some out, too.
I could not sleep late last night so I got up and made the biggest batch of blueberry nut muffins. I use applesauce as the sweetening agent and oatmeal, eggs, a little salt and baking soda finishes it up. I don't use flour. Two and a half dozen it made. We had gone to a Revolutionary war swap/sale yesterday and one of the encampers had gotten buckets of dried blueberries from some Mennonites. I got three pounds! DRIED blueberries. Oh, and some Tillapia.
I eat break/lunch at about 11AM or so, as I sleep late and it takes me a while to come around to stretch out my stiff body....I graze and right now making a pot of turkey chili and will offer my neighbor a jar of it....he enjoys my chili.
The local Mom & Pop sub/pizza place has good, cheap food. I buy a $9 seafood platter with a flounder fillet, 10 fried butterfly shrimp, clam strips, and 2 sides (onion rings, fries, slaw, veggie, etc.) I get 2 huge meals out of it...I could (and should) get 3 non-piggy meals out of it.
My neighbors took me to lunch at a new restaurant the next county over. It's jointly owned by a microbrewery and a BBQ place just a few blocks from it. In addition to beer & ale, they serve fried chicken, fried seafood, and bar food. Actually, most everything is like upscale bar food (I think there's a burger on the menu.) I got the seafood platter: fried flounder, fried shrimp, fried oysters, fries and slaw. Yeh, it was a little too much fried food...but it was good.
