    Just arrived home after a little trip on the way home stopping at a roadside stand bought some fresh pineapple. tangerines, and oranges. My daughter has been bugging me for a pineapple upside down cake for a moth now. There in season right now just spend a dollar for for a nice sized one.

    One of the fond memories I have of an earlier time is the "Pineapple Man" walking down the beach in Rio. He would sell you a whole pineapple for a quarter (a long time ago) and he would peel it with a machete that was hung at his side and you could eat it like an ice cream cone, holding it by the spiny top.

    Fresh pineapple is one of my favorite things to eat. You can take the top that you have cut off, set it in a flower pot with sand and it will grow another plant. I did that once. It made a lovely house plant. Then it got too big for a house plant and I set it out in a big pot outside. It survived all summer but died the next winter.

    The pineapple upside down cake came out of the oven an hour ago not pretty but good. Photos coming later when my computer expert comes home from school and can move the photo from my phone to computer. Gluten free upside down cake.

    I'm studying YouTube videos, getting ready for my first pineapple, whenever they come in season. :rolleyes: .. Don't like waste. :(

    As I said above, they are kind of a pain. My wife bought a tool that does a lot of the cleaning for you. Here, the waste goes to the chickens, but goats love it, too. Just don't give it to your fellow in large amounts, as the bromelain/ bromelase will burn their lips if they eat too much. Chickens don't have this problem, but people do, so don't pig out until you know how your lips deal with it. Also, you cannot use fresh or frozen pineapple in gelatin desserts, as the same enzyme digests the gelatin. If you have digestive issues, however, the fresh pineapple will generally help those.

    Pineapple Upside-Down Pancakes:cool:

    DIRECTIONS

    1. Lightly grease a large sauté pan or griddle over medium-low heat. In a large mixing bowl, whisk together pancake mix, cake mix, milk, vanilla, and eggs. Use measuring cup to pour 1/3-cup pancakes onto pan.
    2. When bubbles start to form in the batter, gently add a pineapple ring. Place a maraschino cherry in the center of the ring. Let it cook for another minute or so before flipping the pancake.
    3. Cook other side until lightly golden. Serve with maple syrup.

    Nothing is ever wasted when we have pineapple first rip the top off put in water need to change daily for a while and it will start to root and can be planted. Next we peal the pineapple and core for eating all that was cut off gets put in a large pan with water brought to a boil for a while then into a blender than strain for a nice pineapple drink might need a small amount of sugar. Nothing goes to waist the straining head for the garden.

    I love fresh pineapples but I don't care for the canned ones and rarely get good ones in the stores here, so I don't buy them often.
