Thank you all! A little misty eyed right now entering my 70th trip around the sun. Next year the big 70. It has gone much too fast. Just finished my #2 breakfast. I put twice the milk by mistake in my pancake mix and it turned out like a souffle inside the pancake since I use 1 egg to make an 8" pancake. It was AWESOME with 100% real Canadian maple syrup and local real butter. My recipe for making an 8" pancake for one person. Use 8" non stick skillet treated with olive oil, heat on medium, whip with folk one whole egg and 2 splashes milk for traditional or 4 splashes for souffle. Whip in 2 heaping tablespoons Bisquick. Blend till smooth. Pour in hot skillet. Wait till brown around edges and firm looking on top, then flip. Brown for a minute or so, then flip out onto plate and add your favorite topping. I am enjoying with Faye's mountain girl hot chocolate. Two heaping tablespoons rich hot chocolate mix with a touch of coffee. Add a touch of cinnamon then one half to one shot fine brandy then mix completely. Fill mug with hot water, mix and enjoy. I am making my own cake, but Texas style. Sweet cornbread with lots of real butter and a bit wildflower honey mix for icing. Cake #2 for later in the day is just a heavy dark chocolate brownie mix with rich chocolate icing and a bowl of coffee/chocolate local made ice cream.
