Tuna casserole for supper tonight (Tuesday).. I put in the casserole a ton of veggies making it a one dish meal.. I now have some LEFTOVERS ........ Ech !!! how I hate leftovers...
B/S chicken thighs on the BBQ for supper on Wednesday.. A salad to go with it... Frozen raspberries, thawed with heavy cream..
Tonight (Thursday) was another lazy day.. Frozen burgers on the BBQ... .................. easy enough Steamed and smashed carrots and parsnips with caraway seeds and butter .................. easy enough
I have a large butt - hip section of Moose that was given to me.. It is absolutely huge and could feed a village for a week.. It is frozen in my freezer and has been there for the past 3 months..... Well, I took it out of the freezer and I will bake it in the oven on Saturday.. Let it thaw slowly in the fridge.. I have an extra large roaster to put it in.. I will add some herbs and spices before roasting.. Some liquid as well.. The problem is very simple.. We will eat about 3 meals (hot and cold) from it and I will have LEFTOVERS GALORE !!! There is a large bone in the meat which might prove to be a challenge to me as I have NO idea how to carve up the monster to begin with... I love a challenge when it comes to the kitchen, but this one is a real twister.................. ANY IDEAS as what to do with the leftovers??? Any ideas how to cook it ??? Any ideas how to serve it ??? Any ideas how to carve it up ??? I have NO idea how big that bone is either.. I am sure someone on here can help me............................... I hope ........
I'm thinking.....brown on all sides, braise in red wine with a little bacon, onions, mushrooms, garlic and some fresh parsley. Braise until fork-tender, no carving. As for leftovers, freeze just enough for one more meal and give the rest away. To me.

Made my homemade pasta sauce using minced chicken.. Not in the mood for leftover moose.. Maybe tomorrow......
Had some leftovers for supper (Monday).. I zapped it in the microwave and I served some veggies to go with it.. It was tasty, flavourful, and juicy... Moose is a good meat ........ I still have loads of leftovers.. Enough for the 2 of us to have about 3 or 4 more meals......
Looking to a fish meal for a change.. Frozen fillets of Salmon, baked in the oven with herbs and spices.. I have a buttercup squash that I will cube, steam, and mash with butter... That's the veggie...
Supper tonight (Thursday)...... now there's another thing..... Definitely NOT any of the LEFTOVERS !!! Not fish.. I was thinking of taking out of the freezer a package (454g.. 1 pound) of minced turkey to make some burgers on the BBQ...
Friday is food shopping day...... By the time I get home and put away all the groceries, I am too tired to cook, so I need something fast and easy... Frozen marinated chicken breasts on the BBQ frozen.. Frozen veal sausages.. LEFTOVERS.. I still have some Moose meat from a few days ago that I might make a sauce to go over it..
