Tonight for supper I made chicken legs (back attached) with the skin on, on the BBQ.. I made a turnip casserole as the veggie..
Today I'm making B/S chicken breasts, flattened, seasoned and baked in the oven, asparagus, twice baked potato, and corn on the cob. Right now I'm thinking of sausage and eggs for breakfast.
Sheldon.. I make those flattened breasts very often except I bread them in a flour mixture and pan fry them.. My flour mixture consists of flour, garlic powder, onion powder, paprika, salt, and bread crumbs.. I then add them to a preheated pan sprayed with EVOO.. They cook very fast that way and are still juicy, not dry..
Sunday supper was my minced chicken burgers on the BBQ.. Steamed and mashed butternut squash with a few peas added.. Breakfast: 3 egg omelette with turkey bacon for my wife 3 scrambled eggs for me Lunch: As usual, nothing......
I made a chicken casserole with a ton of veggies making it a one dish meal... Enough for another meal another day....
It's almost 5.30am and I'm eating wholemeal toast with strawberry jam...and drinking some hot milky coffee... while it's pitch dark and lashing with rain outside..
We were in Ozark for drs. appointments yesterday and my wife remembered she still had a gift card for Rivertowne BBQ so that's what we ate,
Today I made an apple pie from scratch. Used fresh apples and made my own crust. It's on the counter cooling right now. Mmmmm!
Tuesday we went food shopping and we ended up coming home rather late to make something for supper.. I took out of the freezer 3 Prime Rib burgers (1 1/2 burger each) that I bought.. Put them frozen on the BBQ.. Peeled some carrots and a parsnip, diced them, steamed them and mashed them and that was our veggie.. Breakfast: 3 egg omelette with 2 slices of turkey bacon for my wife.. 3 scrambled eggs for me..
