What Are We Eating For 2016?

    Made mini meatloaves for supper tonight.. I made my regular meatloaf recipe and then I put the mixture into muffin tins and made mini loaves.. I ended up with 12 mini loaves and naturally I have LEFTOVERS....

    For the veggie, I made another salad but this time I made a dressing different..

    My daughter baked a ham a few days ago and today I will be taking that ham bone and cooking it with dried navy beans, Rice and cole slaw will complete today's meal.

    Green beans and sausage for todays dinner so far. Green beans are for health. Sausage is for taste. Ain't supposed to have sausage. WTH, something is gonna kill me anyway.

    I made a tasty pasta salad yesterday. I had it with salmon yesterday, but since friend was over, all the salmon is gone now. I will throw some kind of protein in there, to have it again for dinner tonight, maybe some cheese and turkey, and a few more veggies. It is too hot to cook anything really. a cold pasta salad will fit the bill. I made some eggs with sausage for breakfast. This is going to be a good day to hang out in the AC, and drink cold beverages.

    When I went food shopping on Saturday, there was chicken drums on special.. A package consists of 10 drums which were on the large side.. I bought several packages and froze 4 or 5 to a freezer bag.. I am now NOT short of chicken drums in the freezer..
    We had chicken drums on the BBQ for supper last night.. Each 2 drums were plenty.. I dry marinated them with some herbs and spices first for a few hours.. Then slowly introduced them to my HOT grill.. They seemed a bit unhappy at first, but they ended up tasting simply delicious..
    A fresh salad with my thousand island dressing..
    Some fruit with Splenda and heavy cream for desert..

    Voila !!!! another decent meal that is simple to make

    Well tonight I will be taking a break from the pasta salad. I have left over pizza that needs to be eaten. I am going to the city tomorrow,, or possibly Wednesday. I haven't decided yet, I think tomorrow though. Even though I won't have a lot of cash, I will do a bit of shopping while I am there. I can go to either Richmond or Fredericksburg area,,and they both have their advantages. I am really liking the Kroger in Richmond, but there is less traffic in Fburg...and the stores are easier to get to.

    Tonight was hamburger platter...
    Prime rib burger, veal sausage on the BBQ with some coleslaw.. I also made some fried onions, sweet peppers, and mushrooms on the side..
    Steamed and mashed butternut squash with chives..

    Tonight (Wednesday) I made one of the best quick meals I have ever made..
    B/S chicken breasts pounded thin, dredged in a dry mixture of herbs and spices (that I concocted), and fried in the skillet in almost no oil..
    My princess absolutely loved the meal and asked for this more often..

    Steamed and smashed carrots with peas added was the veggie..
    coleslaw also..

    I just finished breakfast, at 6:30am. It consisted of sausage and scrambled eggs, liberally (I hate words with liberal in them. Change 'liberally' to 'well seasoned') with hot sauce. And, one yogurt cup plus two mugs of coffee. That should hold me until sometime this afternoon.:)

    Well I'm ashamed to even write this but at least it's calories.

    Breakfast....some iced circus cookies and coffee.

    Last night dinner...a half bag of a 5 serving bag of potato chips. They were healthy chips though, it had the word avocado on the bag. One serving was 145 calories and only 45 sodium.

    I did eat a lean cuisine TV dinner for lunch though yesterday.

    I have been eating Panera Bagels and cream cheese I had one for breakfast. They are very fattening, but an occassional treat. I am not sure if all Panera's do this, but on Tuesday is half priced off a Bakers Dozen. I find these bagels will last forever, when they are frozen..I can just get one out whenever I feel like a treat. My absolute favorite are the Cinammon Crunch...they have some kind of streusel baked into the bagel.

    Thursday was hot up here and I didn't want to use the stove, so I put 2 small pre-marinated frozen chicken breasts on the BBQ along with 2 veal sausages..
    Turned out to be just the right amount of meat each..
    I steamed some broccoli and also I had some coleslaw ... Steaming was OK as the hood fan took all the steam out..

    When I say hot, I mean it was 32c ..... I actually had the air conditioner on for the first time this season.. Supposed to get slightly hotter for the next few days..
    I guess I will be using the BBQ every day for the next while..

    Last night (Sunday) was a weird night for supper..
    Hot like hell up here so I won't use the oven or stove much, although we have A/C..
    Princess felt like one of my B/S chicken breasts pre marinated, frozen while I didn't fell like them but rather 2 large sausages that were also frozen..
    They both hit my hot grill at the same time and were ready together.. Breast and sausage combination........................ different....

    Now, I had a butternut squash that I sliced the thickness of a baby finger and put them on the BBQ as well after oiling them.. Totally delicious.. I also had some large mushrooms that saw my grill as well..
    VOILA !!! supper for a hot day.......................
    No stove at all for supper..

    When I say hot, it was 35c during the day.. We rarely get that hot up here.. Its been three days like that so far..

    Oatmeal and coffee for breakfast today. That's it so far. Gained about 2 pounds. Getting too careless.

    In this heat spell, I don't want to use the stove unless I have to.. I BBQ almost everything for supper..

    The hot weather seems to be over for now as it is down to 20c during the day and 8c at night..
    That means I can make a casserole for supper tonight..
    I have loads of minced chicken and turkey (in one pound packages) that I will figure out what to do with by mixing a ton of fresh veggies with it, some sauce, cheese, and in the oven it will go..

    Meanwhile, breakfast will be 3 egg omelette with 2 slices of turkey bacon for my wife and...
    3 scrambled eggs with some cheese for me..
