Last night (Monday) we were out of town so upon returning I had to come up with something FAST for supper.. I had a package of chicken thighs bone and skin on defrosted in the fridge, so I cut away the excess fat, sprinkled them with some seasoning and put them on the BBQ...... While all this was going on, I peeled and cut up some carrots and parsnips, and put them in the steamer on the stove.. I then mashed them up good and we had a decent meal.. For dessert, I have a box of Maroc little oranges that we both dug into.. Pot of tea and we were very full and satisfied.........................
I've been away for the past few days getting a new computer.. Last night (Saturday) I made steaks on the BBQ.. I put them on the grill frozen.. Steamed cauliflower was the veggie..
I roasted a chicken, made some gravy. Chopped raw broccoli salad with red onion, red bell pepper and creamy Caesar dressing. Popped open a tube of big biscuits and baked them. I allowed myself one, grandson will finish them off.
Last Night I had Roast beef, Potatoes in their jackets with butter, and carrot and swede mash...easy dinner, and delicious!!
Fried egg and toast with coffee after my nature walk. It sure felt good, I'd worked up an appetite. I'll be cooking some rice and kielbasa later, for supper and the next few days.
Last night ( Monday) I had fish pie..made with Haddock, Salmon, and King Prawns in a Spinach and white sauce, topped with mashed potatoes..
@SteveNorth, I made your orange Jello with the orange juice yesterday. It's delicious, thanks for the recipe!
Ruby.......... Try using half apple juice and half water for some other flavours.. It too works out very good.. I make strawberry jello with one cup water and one cup apple juice....
Supper tonight (Wednesday) will be a casserole of some sort.. Not sure which one I will make but it will be with B/S chicken breast, loads of veggies, and a sauce of some sort..
Steve, I like salmon cakes but I have always put a little flour in the mixture to make it stick together. I am not supposed to have flour on the low carb diet. How do you make salmon cakes?
