Shirley.. I am also on Atkins and have been for many years, however I am on maintenance as I have lost about 125 pounds and am at a weight that I want to stay at.. What happens is I use certain items in food that are not scheduled for the person that is still on the weight loss program.. To answer your question, (and you won't like it) I use bread crumbs to thicken up my patties.. I don't use much but I certainly use enough to be able to make a patty.. Have you ever heard of a flour called "wheat gluten" which is extremely low carb.. Also "almond flour" is very low carb.. I use both of them and I even mix them to make my pancakes and waffles.. They are low carb and are fantastic tasting.. I think you could use the "wheat gluten" flour to thicken up patties as well as some other items..
Last night, shrimp sauteed in olive oil and sliced garlic, topped with capers, chopped scallions, fresh flat-leaf parsley, chopped and squeeze of fresh lemon juice. Quinoa on the side.
Last night (Thursday) I made a simple meal.. Small steaks on the BBQ and I put them on the grill frozen.. Steamed cauliflower.. Frozen fruit (thawed) with heavy cream.. Pot of tea..
Chicken breasts on the grill.. I dry marinate my B/S chicken breasts and then freeze them with the marinate.. I then put them on the grill frozen.. A salad was the veggie..
I will be doing some food shopping today, so I have NO idea what will be for supper till I get home.. I will buy something to cook for sure..
I am mainly living on curries and lots of fruit and curd while on this vacation. This mornings breakfast was amazing with cracked rice with fresh coconut on mixed fruits and topped with buffalo milk curd with local honey
Tonight I was soo shattered by the time I got home...about a millimetre of energy left...so I just put a Hawaiian Pizza in the oven as soon as I got indoors ( btw it's freezing out there..2 degrees.).. ....dinner was ready by the time I got showered and changed...15 minutes flat , and I was sitting eating it in front of of my recorded favourite TV show.. with finger food , and in a nice cosy warm livingroom.....and then I had a Big fresh cream dark chocolate Choux Bun for afters... Bliss!!
I just got to the high school that the basketball game is it!! Even with GPS it was crazy, now all I can think about is getting back! Enjoy your pizza!!
Supper tonight (Saturday) was a meatloaf made with minced turkey.. I also made a turnip casserole in the oven at the same time..
