Supper tonight (Wednesday) will be a Tuna Casserole.. Its been a while since I made that and tonight being a bit cool, its the perfect thing to make.. I like to load up the casserole with a ton of veggies making it a one dish meal..
Which veggies do you add to that, @Steve North ? I used to make it a lot more often than I do now... it was usually just peas or mixed veggie for me because I was way too much into following recipes precisely back then. I grew out of that and love experimenting with ingredients now. I'd like to try some variations now... variation to the veggie choice as well as the pasta addition.
Chopped onion, sliced mushrooms, peas (frozen), shredded carrot, green beans, broccoli florets, sweet peppers diced, are some of the veggies I use in my casseroles.. I try to make it a one dish meal so as not to add more veggies.. For pasta, I like to use one that will cook rather fast such as small shells, macaroni, or any small pasta like that.. I also like to add lots of cheese ........
A big burger with cheese, roasted red pepper, thinly sliced onion and a swath of mayo. I don't put cheese on burgers unless it's with roasted red pepper, I just love the combination.
Small rib steaks on the BBQ.. It was about -42c and I went out to make a BBQ... Steamed and mashed butternut squash, butter, and peas....
Last night I was just too tired to eat much, so I had a tiny plate of Chicken Korma and some Naan bread... It's 5am now and I'm starving so I'm just about to have some blini's..and eggs
A bit too cold to BBQ again, so for tonight I will be making something in the oven.... How about some soul food on a night such as this.. MEATLOAF made with minced chicken..... As for the veggies, steamed and mashed carrots with some peas added...
Tonight (Monday) for supper I am making NOTHING !!!!!!! We are going out to our Seniors club for our monthly pot luck supper.. The third Monday of the month we have a pot luck supper... NO cooking for me tonight.. Its like a mini vacation ....................
I will be eating a little differently in 2016. I'm adding more veggies and fruit to my meals and trying cutting out a little of the sweet stuff. Now that I'm going to be 65 on Feb. 25th I am going to try to start using it or losing it and although I eat pretty healthy already...there's always room for improvement.
It's almost 9pm...so I'm just about to eat dinner..very late I know...but tonight I've got a small crown of chicken stuffed with sausage meat and red onions..and a little steamed samphire...
