After the hog has been butchered, they throw the carcass and bones into a big pot and simmer the remaining scraps of meat off of it, adding spices to it. They add corn meal and wheat flour to thicken it, then put it into loaf pans and refrigerate it. When it's set, they dump out the loaf, slice it, sometimes dredge it in flour (I do), then pan-fry it. It is one of those dishes that was created to "waste nothing." It's primarily an Amish (Pennsylvania Dutch) thing. It's also called pan haus, pon haus, pon haws and pann haas (all as two words or one word without the space.) My dad pronounced it "pawn hoss", and it means "pan rabbit." His parents were German. My mother has made it, just with a purchased hog's head. It's better for you (less bad) than bacon or sausage because it's mostly flavored corn meal with little bits of meat in it...it has less than half the fat of sausage. Some people put syrup on it, as they would on classic fried corn meal mush, which is what this really is, except for it being flavored/bound with pork broth & scraps. The spices are way milder than sausage. You gotta get it crisp!! It makes a nice change from bacon & sausage.

i had Eggs Benedict for breakfast this morning. What did you have? Our dining room was opened but no fancy table settings yet. One person per table, social distancing, masks.
Have tummy issues at times so when I find something that works I tend to stick with it, so today my semi usual: Home made waffles 4, milk, OJ, thick sliced bacon, scrambled eggs with salsa and red peppers. I never have any issues with this and really like it. I will probably have close to same tomorrow.
Breakfast: Fully cooked grits with olive oil, vegan cheese, soy sausage, capers, homemade salsa verde, turmeric, garlic. Charred flour tortilla with refried beans.
Do you ever make mayonnaise that does not have oil in it, @Trevalius Guyus ? I tried my first experiment today, made with tofu, seasonings, and a little almond milk. It actually came out pretty good, but thought you might have a better way, since you are a chef.
You're doing it right. I put soft tofu into a blender, add a dash of soy milk, some garlic and turmeric. I also add a dash of olive oil, but I've omitted the oil, at times, no problem. A small squeeze of lemon, or lime, also adds a nice tang to the prep.
My breakfast works well for me I did forget to mention shredded cheese on top works for me just the thought here of red peppers now I have to have one.
Just had another breakfast for my supper tonight corn tortillas, eggs, red peppers, hot sauce, cheese & sausage had 4 of them with milk and juice.
Sausage, egg & cheese sandwich on a homemade burger bun. I usually have fruit & cereal, but when there's inclement winter weather, I go for the hot breakfast. The Eggs Benedict sound good, @Lon Tanner I've not made them in years, mostly because I can't find a decent Canadian Bacon.
