What's For Breakfast Today?

    breakfast this morning was compliments of the hotel we are staying in, and thanks to covid, it wasn't much. Coffee and a "jimmy dean" sausage/cheese/egg thingie. Slim pickens.

    This morning I had coffee, poached eggs on hash browns, orange slices,melon & grapes.

    My usual breakfast: two sausage links or patties, two XL fried eggs, one cut up/fried potato, two toast and two cups of coffee w/Splenda and flavored cream.
    For a change, some mornings I will have a bowl of either Mini Wheats or Frosted Corn Flakes, but generally, that isn't enough. Add a cup or two of coffee.
    We really miss eating breakfast out, but can't do that until a few weeks after we get our #2 Covid 19 vaccine. And, then, we have to wait, other than weekends, until my wife's temp job ends.
    I miss eggs benedict breakfast at Mimi's Cafe, with a good Bloody Mary or the large breakfast sausage-eggs-pancakes breakfast at iHop.

    Today I actually cooked breakfast because my little MIL stayed here overnight. We had scrambled eggs, grits, biscuits, ham, coffee and orange juice.

    Since it is both cold and inclement:

    -French toast made with apple brioche
    -Small omelette from the residual french toast egg mix
    -Sausage patties made from cheap house brand rolled sausage meat that cooks down to nuthin'

    OMG ! I had the BEST breakfast this morning ! I had some fresh collard greens chopped up, and I steamed them with some red potatoes cut into small chunks, and then made a vegan gravy for over the top. I had NO idea how delicious this was going to taste, and I am definitely going to make this again, it is healthy and would be good anytime of day. It was a nice hot breakfast for this cold morning.

    Refreshed the supply of firewood on my porch, so rewarded myself with:

    -French toast made with apple brioche
    -Omelette

    It's interesting how our idea of "breakfast food" is so narrowly defined. Lots of folks will do the same sandwiches they would have for lunch.

    That being said, I'm not sure I would ever have thought of cooking greens for breakfast (although I'd eat them if they were put in front of me.)
