Excellent... Poatoes onions peppers and zucchini carmalized with a splash of mostaco wine for good measure. Served with moist tender chicken breast!! I out did myself...
Yesterday I had two Oktoberfest-style roast chickens, one for me and one for Sari, and tomato salad and washed it down with a 19 oz stein of Beck's beer. Was delicious.
No squirrel stew tonight! Sweet corn, broccoli and a piece of ham washed down with a couple glasses of iced tea and a fresh picked Honeycrisp apple for dessert.
It looks like we are having some kind of chicken stew with a bunch of odds and ends from the garden such as corn, peas, beans, leeks, kale, and potatoes. At least that is what I saw coming in from outside.
I only post something if it's different from before. Otherwise I pretty much eat the same things over and over again. LOL Yesterday it was spaghetti sauce and ground beef made with elbow macaroni instead of spaghetti. (Not my picture.)
I had skinless chicken thighs and broccoli florets which I cut up small and mixed with Egg noodles coated in Soy , & Hoisin sauce as a stir fry
We had the loaded cauliflower dish that we both enjoy, and some pork steak. I have a pot of broth started in the slow cooker. It has my leftover pork steak (I only ate half of it) and all kinds of veggies. This is my first time of actually cooking something just to make broth (as opposed to a pot of soup), and it is supposed to cook at least 24 hours, from what I have read. Some people cook their broth longer, but I think that would be if they were using large bones and making bone broth. I don’t usually get hungry much in between my one meal of the day times, but if I do, then a cup of broth is allowed and not considered to be breaking my fast time; so I thought I would make some and see how it goes.
Last night I made this recipe from the 70s and served it with a salad of tomatoes, cucumber, and onion. French Onion Pie 1 9” frozen pie crust 1 3 ounce can of French's French fried onions 4 eggs 2 cups milk or a combination of milk, cream, sour cream, etc... 1 ½ cups shredded sharp cheddar cheese S&P to taste A big pinch of cayenne pepper Par-bake the pie crust for ten minutes according to the package instructions. Beat the eggs with a wire whisk, add milk and seasoning to eggs. Remove crust from oven and reduce temp to 325F. Put half of the onions into the bottom of the crust, top with cheese, add egg mixture, top with remaining onions. Bake for 50-55 minutes until a knife inserted off-center comes out clean. Cool and serve warm or at room temperature.
Yummy.... Last night I had cod fillets in a tempura batter... just on their own with Mayo... followed by some Water melon!! Very simple.. ..but then for supper I made some Tomato , basil and mozzarella flatbread!!
Gee, I'm just not sure because we have a refrigerator full of food right now. There is white beans with ham and sausage, rice, cole slaw, there is barbecued ribs with rice dressing and baked beans, there is spaghetti, and there is grilled chicken with baked potatoes and broccoli. Whatever I decide to eat today....I know it will be yummy.
Unless we go out for dinner.. and we have no plans to at the moment, but hubs does often spring it on me at the last minute...then tonight I'll be cooking Lamb chops in a caramelised red onion gravy , with mashed potato, and Riced Broccoli Hubs will be having baked stuffed mushrooms served with Hearts of Palm
Today is cheese ravioli from the freezer, sauce from a jar and a side of freshly cooked broccoli spears from the flea market this morning!
