What's For Supper?

    Last night was Crumby Cod and cabbage salad.

    Tonight's dinner will be a slice of pizza or chicken wings and a salad.

    I am hankering to try making Salmon cakes, baked in the oven tonight! I'll display the recipe ingredients first, of which I lack several things, and then what I intend to use. I really love Salmon, and bought large quantities of canned, on sale, over the past few years. We have a pantry full of it, as I have concentrated on cooked veggies nearly every night!
    1- 14 oz can salmon
    1-egg
    2-Tblsp Worcestershire
    2-Tblsp Dijon Mustard
    1/2-Tblsp Old Bay Seasoning
    1/4-tsp onion powder
    1/4-C mayo
    1/2-sleeve crumbled saltine crackers (or 1/4-1/3 good Parmesan cheese (???)
    dash salt & pepper
    1/4-C chopped parsley

    I will use salmon, egg, mustard maybe, chopped fresh onion, mayo, Ritz crackers, maybe cheese on top, nothing else. Mostly mix everything but crackers together, those go in last. Make 5 or 6 balls, flatten on greased cookie sheet to 1/2 inch thick, bake until evenly browned, 20-25 min. @ 350.

    How does this sound?

    I thought that one was for a loaf. Perhaps I remember incorrectly. Without going back to read it, I should say that being the cooking novice that I am, a loaf vs individual cakes or patties suggests different approaches. I have so much yet to learn, so little time left to squeeze it all in!

    Tonight it will be butter beans and a side of cabbage salad.

    Butter Beans
    1 14.5 ounce can of butter beans or your favorite variety of canned beans
    1 carrot chopped
    1 rib of celery chopped
    1/2 medium onion chopped
    2 cloves of garlic minced
    1 packet of GOYA ham or chicken flavored bullion powder
    1/2 t red pepper flakes
    1/4 t ground black pepper

    Simmer together for 20 minutes until the vegetables are tender and the bean liquid has thickened slightly.
    I usually top it with a generous sprinkle of grated Romano cheese.

    delicious Bea.... I love Butter beans...:D...although I'd leave the celery out, I don't like that.


    Tonight I had giant pork & beef meatballs in a parma and tomato sauce mash, with Broccoli

    I sliced up some peppers, onion, cauliflower, and a tomato, and am going to stir fry it with some strips of chicken breast.
    Bobby boiled a dozen eggs, and I chopped that with some ham, sweet pickle relis and onion, and now he has egg salad mix for sandwiches when he wants to snack.

    Last night fried chicken breast nuggets...tater tots and okra.
    Tonight red beans with onion and meat...flap jack cornbread...um:)

    I eat such weird deconstructed meals that I can seldom post what I eat.

    That means at 3:00 pm I may eat my veggies, then at 4 I'll eat my meat etc.

    I do that the whole day...only time I eat a full meal is at a restaurant.

    Otherwise I'm eating something every 2 hrs :)
