I understand it's common over there to eat a lot Frank...but just because you can doesn't necessarily mean you should...
Liver and onions, mashed potatoes, sauteed cabbage with bacon and a cornbread muffin. I'm stuffed, people.
I forgot to post yesterday, but I made chicken green chile enchiladas from leftover rotisserie chicken and they were so good (if I do say so). Today I have a chuck roast in the slow cooker with seasonings and peperoncini peppers; we'll have a sort of "cheese steak" French dip sandwich on crusty rolls when the meat is tender. Probably cole slaw as a side.
I'm too tired and sore to feel hungry tbh... however it's only 5.20pm, and if I don't nod off, I might get a crust roll with ham, as a snack later...
I found some gorgeous mustard greens at the store yesterday, so today's dinner will be mustard greens, smoked pork chops, small new potatoes and corn bread.
It's difficult to eat without pain with this toothache, but tonight I had a Baked potato with lots of butter and Tuna & Mayo topping...
Tonight, dinner is going to be breakfast. We just got home yesterday afternoon and I've been unpacking all day. Eggs, bacon and waffles is the absolute best I'm capable of tonight.
It doesn't matter what you eat. You are able to have your meal in what I consider to be the most beautiful part of America! My parents used to have a summer home up the Blue Ridge mountains and I always looked forward to visiting there.
I agree that the Blue Ridge is absolutely gorgeous, but now we're back in Florida. I will be grateful for that fact come winter when I'm still in shorts and flip-flops, but right now it's HOT! here and I miss my mountains.
I had Carrot & swede mash, paper thin sliced honey mustard ham cold cuts & baked beans......and Crème brûlée,... All very easy to eat....
My parents 'summered' in the mountains. Sort of reverse snowbirds. I'm glad you are somewhere warm now though.
Broccoli cheese soup (from Panera Bread) with a crusty roll for dinner. I made a blueberry cobbler for dessert; just took it out of the oven.
