I had Roast beef, mash, sprouts and beef gravy, and I had a little slice of lemon iced madeira cake for supper ...
Lots of great meals. Every time i come to this thread, my mouth waters, in a happy way. Being just me, my cooking is quite different than there was two. I do eat well, mainly meat and veggies, pasta quite often, potatoes sometimes, nothing fancy or a big feast unless i have guests, very rarely eat bread. If i do have a fancy for some things like meatloaf, cabbage rolls, or other things i can make on a larger scale, and freeze portions. Desserts, again, not often, because i really don't need them, can't always bother, but i do have different home baked muffins on hand and in the freezer, usually have a couple a day, fruit is my dessert.....Bored with my menu yet. .
BBQ ribs, potatoes, salad. And probably a cold beer. I have some blueberries I need to use up so I might have to make a cobbler.
My daughter made a reuben lasagne and shared! It was like a reuben sandwich with a pie crust type bottom and the rest of the stuff layered like a lasagne without the noodles. She cooked the brisket in the crock pot yesterday. It was really good!! I bet it could be made like a pot pie as well. The dressing is optional on the side.
Tonight it's going to be skinless, boneless chicken thighs, whole pickled beets, noodles, milk for me iced coffee for her.
Today I'm making green chili chicken enchiladas with the leftover rotisserie chicken from yesterday. They are baking right now, so I need to cut up some salad.
Tonight I had Bacon and egg Flan, and Asparagus Tips.... later for supper I had Chicken roll sandwich.... ..then when hubs got home, I made him a Ceaser Salad with croutons, and then added coleslaw, beets, tomatoes, and grated carrot to it.. ( he doesn't eat meat or fish)...
