    I made a veggie meatloaf, my first try at this, and it actually turned out pretty good. Even Bobby had some of it.
    The dark color is the topping/glaze that I put on it, which was kind of a BBQ glaze.

    Earlier, I had my spinach green smoothie for breakfast. My kimchi and sauerkraut are fermenting, and I am going to test taste them later and see how they are coming along.

    I had my cardiology stress test today and my husband went with me. We had planned to go to dinner at a restaurant when done, but it took longer than expected and we were both tired and cranky. Also rush-hour traffic was getting started so we decided to just stop on our way home and pick up Subway sandwiches.

    There's a new selection at Subway called "sliders." They are small sandwiches on what appears to be a ciabatta-type roll, so I ordered 2 of them with different toppings. I got a southwest steak and cheese with chipotle sauce on one, and a black forest ham with pepper jack cheese on the other, both toasted to melt the cheese. They were both EXCELLENT. I will be getting those again, though my husband stuck to his traditional club sandwich on wheat.

    Today I made split pea with ham soup in the Instant Pot, and a loaf of french bread in the bread machine. Then I put the dirty dishes in the dishwasher. I am a modern woman. :D:D:D

    Tonight had Crappie from our freezer and pork & beans. The fish was caught in a lake out from
    Eastland, TX and placed in our freezer four years ago. That's the last of it. I'm really sort of glad.

    The Better Half was over at his mom's, so on his way home he picked up Chick-fil-a. He had a sandwich and waffle fries; I had chicken noodle soup and a yogurt parfait. :D

    The very most I plan is the night before, because it';s just for me ( my husband is vegan and gets home long after I've had dinner)... so if I have to defrost a chop or some chicken or fish, then I'll get it out of the freezer the night before, but I'm not over fussed, sometimes I just don't feel like eating that, and I'll ignore it and go looking for something else instead..sometimes even just a bowl of cornflakes, or a bowl of broccoli will do me...other times.. an egg & bacon sandwich will suffice...
    As I don't have to plan meals around 2 of us, I can please myself....

    Not sure how to cook them to its...then going to try some Uncle Ben's butter and garlic rice.
