    My husband is on soft foods for a week after oral surgery yesterday, so he asked for red beans and rice with cornbread muffins. I'll add some andouille sausage but he probably won't have any of that.

    I had Chicken Korma, and warmed Garlic and coriander Naan bread....

    I'm still on my soup diet so I think I'll mix some Italian sausage with some dried vegetable soup mix today.

    Flour tortillas cheese, salsa, red pepper strips & thin ribeye steak slices heated till cheese melted. Cold glass of milk to wash it down. 3 of those things!

    Today it's pot roast, mashed potatoes, green beans and wheat rolls. I think everything will be "soft" enough for the hubby though he will have to mince up his roast. :D

    I had some very ripe bananas so I have a loaf of banana bread baking right now.

    I ended up using it with macaroni, diced tomatoes, a jalapeno, and chili powder instead. That turned out pretty okay.

    Today it's easy! Since the hub is still on soft foods, I bought a couple of Marie Callender's chicken pot pies for dinner. I'll probably have salad with mine.

    Today, I made some eggplant lasagna for our main meal, and it turned out really delicious. I have always floured and fried the eggplant before making eggplant Parmesan before, but this time, I just sliced up the eggplant and used the fresh slices in the recipe, and it turned out just as good as the ones where I had battered and fried the eggplant first. I am sure that this made a lot less grease, and since there was no hamburger in it, the whole meal was actually pretty low fat except for the cheese part.
    I like eggplant, and want to branch out and learn to use it in more types of foods.

    Lon you eat some very fancy food there, I would not know hot to act eating like that, today I had a concentration class and we ate on the tailgate of pickup trucks, grilled chicken breast, shredded fresh parmesan cheese, ranch dressing on a homemade wheat bun. It hit the spot well, ice water to drink 2 glasses!
