What's For Supper?

    My husband requested tuna salad for dinner, which sounds pretty good to me. I've got the eggs boiling and need to go chop onion and celery. I'm hungry already and it's just after 2. (Didn't eat lunch.)

    Thinking of air cooked pork chop, leftover cabbage casserole, maybe a salad or a potatoe of some kind.

    Made pizzas for the first time in my Breville.
    Start with salad/end with Fudgesicle.

    -Crust brushed with garlic-infused olive oil
    -Sprinkle of Italian Seasonings
    -Toss on sautéed minced garlic
    -Fresh block Fontina cheese

    -Homemade sauce
    -Parmigiano-Reggiano
    -Fresh mozzarella
    -Black olives
    -Sauteed mushrooms
    -Onion
    -Green pepper
    -Red pepper
    -Pepperoni
    -Italian sausage

    Of course, copious amounts of crushed red pepper.

    Not bad for a maiden voyage.

    As were the grilled cabbage steaks I made the other day.

    @John Brunner ..just plain ole USA catfish..hubby from gulf coast and we both are picky fish wise. Fish of any kind must be from Gulf of Mexico, Canada,
    or Louisiana coast...places like that.
    Now last night did something new.
    Chicken strips with Lipton Golden soup mix , egg and bit of flour for oven coming at 425 degrees..Lordy that was moist and tasty. Oh I splashed a dab Olive oil them.
    Left over cabbage casserole garlic potatoes mashed. That was enough for us.

    I agree 100% about sourcing fish properly. The small fish shop near me here in the middle of Virginia gets all his stuff fresh from the Virginia and Maryland coasts. I won't buy the Chinese/Vietnamese stuff from the grocery stores.

    I had a recipe for Kentucky Fried Chicken that sounds like your chicken strips method. It was a packet of dry salad dressing mix stirred into oil, then rubbed over the chicken, then egg wash/briefly fried/baked. Those dried seasoning/soup mix recipes are usually pretty good. Lipton's Onion Soup Mix is magic!

    Regarding last night's meal: I recall why I don't do stuff like that very often. My house smells like fried fish. I'm sure the odor will linger long after I stop noticing it. And I have enough leftover hush puppies to feed an army. Why do I never learn to cut these recipes back?

    Chicken cutlets, boiled potatoes with parsley butter, and garden peas. Salad was cucumber, purple onion and tomato with oil and vinegar.

    Lolol..seems we all are eating very well during these pandemic times.
    Thinking of some potatoes sliced with onion and peppers hamburger all sliced zucchini and oven cooked or in cast iron skillet..sprinkler of cheese.:)

    It is pretty funny how well we seem to be eating. My waistline is evidence of hyper-prosperity and lots of kitchen time.

    I made some fried breaded asparagus a month or 2 ago, with 2 flavors of dipping sauce. I tried 2 methods for making the asparagus (egg wash/bread crumbs and buttermilk/flour.) The buttermilk/flour made a nicer, puffy coating. It is soooooo good! I always keep asparagus sitting in a jar of water on the top fridge shelf. Every time I open the fridge I see that breaded treat. Steaming it is just so unfulfilling...

    I just received a pasta machine I bought through Ebay. As soon as they ship the pasta flour I bought, I'll be swimming in homemade ravioli. I can't wait. It's been so long since I've had quality pasta. And I found an asparagus/ricotta ravioli recipe!

    I've been following the trail of menus you've been posting. I, too, like baking in my cast iron. Scalloped potatoes sounds good...

    @John Brunner...are you only cookng for you ? All your coooking sounds really good but just sounds like lots of food. Of course you can freeze up some meals.
