    Chicken with peppers onion and rice in chicken stock and cream of chicken..spinach salad with oven butters iItilian bread slices. Later chocolate pudding with cool whip clouds.

    Very small meatloaf..zucchini potatoes onions and peppers oven cooked in spices and olive oil. Some toasted Hawwian buns.
    I just sprinkled mozarrlea cheese on the zuchhni stuff :)

    OMG, I LOVE those Hawaiian rolls!! I wish I had about a dozen and a stick of butter. :D

    My husband is having dinner with his mom tonight so I made myself a Swedish meatball Lean Cuisine. :confused: It was so nasty I threw it out and made cheese toast.

    I had to look up "hoppin john."

    I've cooked with ham hocks (and smoked neck bones) pretty often, but never heard of this dish.

    So I assume Southern/Louisiana dish?

    It's been a while, but I used to pressure cook ham hocks, potatoes and green beans for a meal, with a side of corn bread. Then save the bones for a soup.
