I made the chicken thighs yesterday, but I was so distracted with trying to make those and the ricotta before I called my mom that I totally forgot about using the breadcrumbs. I ended up making a sauce that I immersed them in for a few minutes, then cooked them in, and it turned out really nice. I had the thighs last night for dinner with Stovetop stuffing, cranberry stuff from a can, and some green beans. It was yummy. Tonight will be leftovers.
Tonight I put chicken breast tenders wrapped in tempura batter with a sweet chilli sauce.. in the oven as soon as I got home ..they were only to roast for 20 minutes...that gave me time to grab a quick shower and get changed...5 minutes before I was due to take them out, the phone rang, (this was 7pm) very important call ...and by the time I remembered the chicken tenders at almost 8pm they were inedible..all tough and dried out... So I've just had a snack of some toasted mini Pitta breads dipped in Taramasalata ...too late now at 9pm to eat anything more than that

Ruby , I have tried and tried for many years to make a good pie crust too ,but I just cannot do it..... so now I just buy Pillsbury pie crusts .. tasted pretty good to me.. but you can always tell a Pre-made pie crust from a Home Made one.. Home made is always the best.. !!
Last night I realized that I don't have a meat tenderizer. I've added that to my list of things I need to purchase, but it turned out that I didn't need it after all for last night's dinner. I've never had 'cube steak' or 'cubed steak' as tender as what I cooked last night. I have never seen cube steak this tender, nor this pulverized. I got it at Kroger in the meat sale bin, otherwise known as Manager's Special, for $1.93!! I knew it would only take a few minutes to cook, and it had been a busy and tiring day, so I decided to go for it. I will never buy cube/cubed steak anywhere but Kroger from now on. Hopefully it wasn't a fluke, and it will always be as tender as that batch. Here's the recipe, in case anyone's not familiar with it. Apparently it's the same meat used for chicken fried steak/country fried steak.
Yum, I love refried beans. Do you make your own, @Sheldon Scott? I've never made my own using a recipe. I have squashed some beans in a pan a few times, though, although they didn't taste quite as good as actual refried beans. I guess I'll have to look up a recipe to make my own from scratch one of these days. I've never made Mexican rice from scratch, either, so I guess I could try making those together.
My wife often makes refried beans from scratch but this time it was Rosarita brand in a can. We sometimes make Mexican rice completely from scratch but usually we just cook the rice then add homemade salsa,
Last night.. I had slow cooked shredded beef in red wine, and Pasta Pappardelle.. This morning from brunch I had wholemeal toast with blue cheese and chopped fried bacon...
Yesterday my wife had to go to the hospital in the big city for a test. On the way home we stopped at KFC and got a bucket of extra crispy with baked beans and slaw. I got enough so that we will have the same today.
I hope she's feeling better soon @Sheldon Scott. I love KFC, haven't had it in a while. Last night I was feeling under the weather, but had to cook some chops I'd defrosted, so I mixed up some low sodium soy sauce and marmalade, soaked them & poured the rest over them. They chops came out delicious, but the pan was a mess. I thought I was going to have to toss it, but since it's my 'go to' pan, I scrubbed and scrubbed, and now at least it looks salvageable. I served them up with baked potato and corn, and I'll have the same tonight and probably tomorrow night. I love leftovers .
Last night I made chicken tenders with broccoli, rice and cheese casserole, lettuce and cucumber salad with Caesar dressing.
Tonight we have a choice of soft tacos with all the trimmings, baked marinated chicken breast, rice dressing (or dirty rice as we call it in Louisiana) and mixed navy/lima beans with jalapenos and bacon, or grilled steak, cheesy stuffed baked potatoes, and corn/broccoli combo. It's "encore" night at the Hunts!
