My plan for today is Mackerel patties and sweet potato fries in the deep fryer along with some peas and corn on the cob.
Now that the "encores" are disposed of tonight's menu will be marinated baked Tilapia fillets, yellow rice with rotel tomatoes, and roasted aparagus spears.
Never had Mackerel patties...is that like Salmon patties @Sheldon Scott. I think Mackerel is on the list of higher Omega 3's which is better for you. But isn't Mackerel a strong tasting fish? How do you make those patties?
Yesterday it was meatloaf, roasted asparagus, noodles Alfredo. Tonight will be baked chicken with fresh lemon and fresh garlic, broccoli and I don't know what else yet.
Sheldon, asparagus is cheap in the markets now so we're taking advantage but oh, how wonderful to have your own!! I guess you both work hard to raise your own food, but what enjoyment you must have!
The recipe I use says salmon. I've used both at times and can't taste any difference. I cook 4 patties at 375/400 for 6 or 7 minutes. Crispy on the outside and soft inside, I usually serve with homemade tartar sauce.
Oh, no. Maybe at a farmers market but not in my store. Maybe at Whole Paycheck....err.. I mean Whole Foods. I prefer thicker asparagus, too. Why did that pencil-thin stuff take over?
I didn't eat supper last night, but I had a late lunch that sufficed. I cooked up a package of bacon and had a nice bacon and tomato sandwich. I won't have leftovers of that today/night since it's a Lent Friday, but I've got two small eggplants waiting to be cooked. I ran out of energy yesterday, so if I get a boost later I'll cook them. Otherwise, I'll probably cook up some fish fillets (frozen breaded ones) and save the bacon for tomorrow. If I make the fish, I'll have it with rice and probably broccoli or green beans.
Diane, you reminded me I have fish and a few shrimp in the freezer. That's what I'll have., with spinach and whole wheat toast. GS hates seafood, he'll have the left over chicken and make oven-fries.
