Maybe is was "blackballed" catfish, and was not permitted to play with the other fishes. I make my own blackened seasoning, and mostly use it on tuna steaks. That catfish fillet is not flat enough for the entire side to contact the pan. How was it?
Well, the better half peeled the shrimp and the boil looked tasty. I decided to try canned chicken soup since everything tastes like rusty metal with a side of brake fluid to me right now. No sense wasting perfectly good shrimp.
I peel before because I HATE that gritty "vein." A boil is so simple; just buy commercial cajun shrimp boil spices, add them to boiling salted water in a large pot. Let it simmer for 10 minutes or so, then add the new potatoes and let them cook till almost done (depends on the size and whether you cut them, but don't cut small pieces). Then add the corn and cook 5-10 minutes to soak up the seasonings. (I cut the cobs in half to have smaller pieces of corn.) Bring the pot to a rolling boil and add the shrimp, removing from heat when they turn pink. Strain and dump out onto a platter. Serve with cocktail sauce. The corn and potatoes will soak up the seasonings and have a bit of heat to them. If you like more heat, add red pepper flakes and a few dashes of tabasco sauce to the boiling water when you add the cajun seasoning. (I like Zatarain's or Tony Chachere's)
i had meat concoction leftover from a few days ago, I froze it. So we will have tacos in high fiber wraps with guacamole and chips. Oh and Blue Bell ice cream on a stick
Today we're having hamburger "steaks", baked potatoes, and some kind of zuchinni dish. I'm actually hungry today and just enjoyed a big glass of orange juice that didn't taste funky.
I'm making green chile chicken enchiladas for dinner. Gotta use up some of that rotisserie chicken from the freezer. Probably just enchiladas and salad.
I can't decide. I may drive into town and get ribs. I picked up a steak to grill but it's been raining off & on.
Today we skipped our usual "Sunday Mexican food" and had Popeye's chicken instead. I had chicken strips, mashed potatoes, and cole slaw. I have two strip steaks aging in the garage refrigerator to charcoal tomorrow. Might as well join the "BBQ on Memorial Day" crowd.
