    Yeah, it's St. Patricks day. Corned beef and cabbage with carrots and onions, maybe potatoes or maybe not.

    th (16).jpg Crawfish season is in full swing here in Louisiana so tonight we are having crawfish etouffee, tossed green salad and garlic bread. :)

    I saw a recipe somewhere for Buffalo Chicken Balls.
    I only did this for my grandson, because for me, meh.

    Ground chicken mixed with sauteed minced onion and celery, an egg and some crumbs, S & P. fry in oil, drain. Then roll them around in buffalo wing sauce. I made them last night. He loved them.

    Last night we had broiled , center cut lamb loin chops

    I had mine after a bowl of homemade vegetable/chicken soup with just a little tiny soup mac.

    GS had his with broccoli and shells in creamy garlic sauce.
    We always like lamb with a squirt of fresh lemon juice and salt.

    @Sheldon Scott , I no longer have a pressure cooker but reading this make me want another one!

    My question to you. Will you be grilling or broiling the ribs as an optional second step as in the recipe?

    Nope, Ruby, I just took out the ribs, emptied the water and put the ribs back in for 10 more minutes with some BBQ sauce. They were falling off the bone tender.

    Ruby, if you are considering buying a pressure cooker the electric ones are great. I can't compare brands because we only have one but some of the others look similar. Ours is an AROMA and we love it.

    We also have a stovetop pressure canner which can also be used to cook in but it is much too large for our meals.

    Since yesterday was Easter, I cooked up a hefty piece of ham steak in pineapple juice, along with pineapple chunks. I cooked up some potatoes and carrots to go along with it, it was a pretty basic (but yummy) meal. For dessert, I had made a batch of ricotta cheese, and I poured some of the reserved pineapple juice in with it, and added some of the pineapple chunks and some sliced strawberries. It was yummy. Hope y'all had a nice Easter.

    I have a spiral cut ham sitting in the fridge. I backed out of yesterday's dinner at a friend's home yesterday, my GS worked most of the day, my son goes to wife's family now so I just relaxed.

    I did make tacos and roasted some Brussels sprouts.
