The Better Half is having dinner with his mother this evening, so I'm on my own. I was scrounging in the pantry and found a can of corned beef hash so that's what I'm having. I don't know why I have always liked that stuff but no one else in my family will touch it.
This afternoon I made Bobby a chocolate fudge cake with carrots, oatmeal, and fiber supplements, plus chocolate chips. (I am such a good wife). Tonight we had another food processor dinner……stir fried cabbage, carrots, onions, and tomatoes with a sweet and sour kind of sauce.
I've not made kebobs in a long time, so I've got some cubed chicken marinating, some veggies diced, and some sticks soaking. I'll make rice and a salad...maybe grill some asparagus.
I have no idea what they will bring me and the other residents. It will be a surprise and I will take a pic and let you know. We are all still in ISOLATION.
I can't decide between leftover chicken shish kebobs or going out for Mexican as a reward for finally cutting my acreage (took nearly 4 hours.) I'm sure either will fill the hole.
Was very excited to try some mushrooms I never had before that my daughter brought back from her hike with her dog. They are called shrimp of the woods! Fried them in butter but had to wait till they cooled to enjoy their best flavor. Made up some cole slaw and steak we had leftover from lunch. Split a sweet potato between hubby and daughter.
