The pork roast I cooked today was so large that after dinner, I "pulled" what was left and added BBQ sauce. I have enough pulled pork for three more meals, so I put two packages in the freezer and we'll have sandwiches tomorrow or Wednesday.
The same thing I had for lunch. . A casserole - roasted chicken thigh mixed with mushroom soup and sour cream and topped with Stove Top dressing. Jello with cottage cheese, pineapple bits, and pecans, topped with whipped cream. Cranberry straight from the can and that is a wrap on Thanksgiving lunch and dinner 2021! Now in the style of the late Lon Tanner.......
I think I mentioned that a woman from church uses the Fellowship Room for her family & friends Thanksgiving events. She must have made 10 different casserole sides, along with turkey, stuffing, homemade cranberry sauce and fried chicken. There were a ton of pies and a couple of cakes. I had the full turkey meal, a slice of apple pie, a slice of pumpkin pie, then a fried chicken thigh. Took leftovers home.
We cooked a chicken in the toaster oven, along with a couple of small red potatoes and some stuffing (part of which I made on the stove since not much fits inside of a chicken), and some chicken/mushroom gravy. Cranberries, of course, the whole berry kind out of the can. For dessert, we had a slice of apple pie, and I also made a pumpkin fiber bread; so we have had a really big meal, for us. We still have plenty of chicken for leftovers and chicken gravy sandwich.
It's cold and dreary today, so I'm making vegetable beef soup for supper. I'll have enough leftovers to put a container in the freezer for another cold day.
