The pickled beets were my wife's favorite veggie and I developed a sincere affection for them because we had them so often when she was here. They don't stain my teeth

Pickled beets are one of those things that turns people off merely because of its name, and--to an extent--their appearance. I've sometimes had them while eating at buffets, but I've never bought any, nor have I pickled them myself. I like them, but don't seek them out.

To me, they taste like apple. I think the word "pickled" makes us think of tartness. They are anything but. People don't stop to think that beet sugar is as popular a sweetener. I just read that 30% of the world's sugar comes from beets. Beet sugar is in a lot of the food we eat...you can buy bags of it in some stores just as you buy cane sugar. Beet extract has found a following in the health food/exercise supplement arena as a food that increases nitric oxide levels in your blood, which can effect blood vessels and reduce blood pressure, "possibly" making it easier to exercise (Super Beets is the powdered supplement beetroot extract brand I hear advertised most often in this market.) There is anecdotal evidence that this may reduce cholesterol and reduce swelling/muscle soreness in the body.

Funny, but when I read about beets, there are no concerns cited regarding their sugar content. In fact, beets are a food that has properties claimed to be beneficial to diabetics...not to reduce blood sugar, but to help with some of the secondary ailments caused by their diabetes.

If you used tomato paste, chances are good it was flavored and colored with beets. I had no idea until doing that earlier research.
