I had two hot dogs with onions on whole wheat buns...a glass of milk and a bit of ketchup and mustard. I also had a glass of milk and an apple for dessert. I think that I could have eaten more, something like a fruit salad, but I was too lazy to get all the fruit together and chop it up, so I went with the apple! Good enough I say!
Tonight I had Gluten , wheat and dairy free chicken and mushroom patties...( sound disgusting don't they)?..but they are actually delicious.. had fresh Mange tout with them for veg...
I got a burst of energy yesterday, and cooked up some Pork Shoulder Steaks (also known as butt steaks), here's the recipe I used. It was very easy, and they came out very tender and tasty. I can't believe how few ingredients it required. Ha ha I last posted here on May 11th, and maybe that's the last time I had enough energy to cook an entire meal. I got another burst of energy yesterday, and cooked dinner. I cooked it early, because I know with regard to my energy level, I have to strike while the iron's hot. I cooked a big batch of rice, some Brussels sprouts, and chicken tenders. I had that for dinner last night, and will be eating it for at least another few days.
I am having my usual brunch of kefir and flax meal smoothie. We got some pork steak for Bobby and some chicken for me, and will probably barbeque that either this afternoon, or tomorrow, depending on when Bobby wants to have that. Since we are both watching our carbs, we will just have a salad along with it, with homemade ranch or blue cheese dressing and some green olives and cucumber slices.
I just had some leftover hamburger helper and a salad. I had some gelatto earlier and got a small which was more like 8 ounces. Since it was over 4 bucks, naturally I felt compelled to eat it all! It was spicy chocolate which must have had some jalapeno juice in it or something,anyway, it was pretty good. I liked and enjoyed the intensity of the flavors.
Hot dogs (all beef) and homemade chili with chips and tea. For dessert red grapes and/or pineapple chunks.
My son and I have gotten woefully haphazard about supper these days. Usually supper is a sandwich. However, when I shopped for groceries today I bought items that could quickly be turned into a decent supper. I also bought some vegetarian items to help us become healthier eaters.
Company coming for a 10 day stay. We always eat better when we have company it seems. Here's some of the meals we have planned: pizza, fish (from our lake) fried potatoes, fried okra, baby back ribs, potato salad, baked beans, sausage and pancakes, lasagna, hamburgers, chips & dips, sweet potato cake, home made candy, homemade cinnamon rolls, blackberry cobbler and ice cream, ham, candied sweet potatoes, slaw, pinto beans and cornbread, chili, asparagus stir fry with shrimp. The above should get us through the first day!
That sounds amazing, @Sheldon Scott, your guests are lucky! I didn't have anything defrosted, and didn't feel like cooking anyway, so I made a nice grilled cheese and tomato sandwich last night, with the rest of the tomato slices and some olives on the side. It wasn't the prettiest grilled cheese I've ever made, but it sure was yummy.
