    I have a pork roast in the crock pot and it smells SO GOOD. I slathered it with Butt Rubb, and will pull it apart and add Sweet Baby Ray's BBQ sauce later. I'm also trying a new hamburger bun recipe so we'll have pulled pork sandwiches, cole slaw, and fries.

    My husband had oral surgery today so I made potato soup for dinner. He's supposed to be having "liquids only" today so I blended all the potato chunks and added more cream to thin it a little. It was pretty tasty with a bit of grated cheese on top.

    Today was a "soft foods" day, so I made chicken green chile enchiladas with a little extra sauce to make them softer. I didn't bother with salad since the hubby can't chew on one side.

    Early lunch was Shrimp n Rice and a nice spicy Rue, then later I had two Burritos with some potato salad. Kinda pushing my luck and hope I don't have to drink that nasty foul Milk of Magnesia.

    Leftover pulled pork on homemade buns, cole slaw, chips, beer. Our oldest daughter sent me a box of "designer biscotti" for Mother's Day so I'll have one of those with my coffee later.

    I served ham slices with horseradish sauce or blueberry compote (your choice), green beans and hash browns - meat, potatoes and veggie.

    Salmon patties from home-canned red salmon. We'll see how it turns out, as we haven't done it this way before, as we usually use fresh or frozen fish.
