What's For Supper?

    I think many of us tend to let things slide this way, which is one thing I like about this type of thread. It can be a nice reminder that meals are important not only for our health, but can also be social occasions. I can sometimes get stuck in a rut and eat the same foods over and over, but I like to see/hear what others are eating, because it can inspire me to try new recipes and eat better.

    I cooked barbecue pork chops yesterday. I had one ear of corn, which I microwaved in the husk (just loosen the husk and run some water down into it, so the corn doesn't get dried out.) I cooked it for 4 minutes, then I used my shucker or whatever it's called, to remove the corn from the husk, after rinsing the corn off thoroughly. I also microwaved a small red potato. I like to do that, and split it between two meals. Tonight, I'll have another pork chop with the remaining piece of potato and some sort of vegetable. Oh, and I also had applesauce with the meal.

    When we were kids we didn't have alot so we had onion sandwiches made with left over bacon grease for dinner sometimes I loved them.

    Sometimes, those kinds of meals become favorites, don't they ? I remember my mom would buy the chicken backs and necks and we would cook them over the little BBQ ouside
    It was a lot of work eating the little bits of meat off of those piece of chicken backs and necks; but even today I will do that if I can find them .
    Mostly, they cut the chickens so that the backs are split into part of the thigh pieces, and I guess they throw away the necks, at least I seldom even see those in the store anymore.
    If I buy the whole chicken, then I cut it so that the back is separate, and enjoy that.

    It has been so hot today we ate ice cream this afternoon to cool off. That means i will have something light like a salad or a sandwhich for supper today. My teenager, however, is eating biscuits with melted cheese inside. Can you imagine? He could eat biscuits every day!

    @Yvonne Smith I think they sell the necks separately, for fishing/crabbing. At least I think I've seen them in the end of the meat section.
    @Chris Ladewig My dad loved his onion sandwiches. I have to avoid onions, for the most part, other than Bermuda onions, because they irritate my IBS, but I can eat them if they're cooked a few ways, primarily very soft, as in onion rings, sauteed onions, and wish I could eat them other ways, because I love the flavor.

    My dad is not much of a cook, in fact he is not big on grocery stores either, but I do remember him cooking Western Sandwiches. He loved to take an fried egg, put onions and ketchup on it and devour it. That is not a sandwich I would enjoy, but my roomie turned me onto the joys of tomato sandwiches. They are really quite tasty IMHO. He even went to Subway once, and got a tomato sandwich. I bet he cleaned the bin out!:D:p

    Gotta have a light supper. I pigged out on dinner. Cooked 1 serving of rice in a skillet. When it was just about done, I added a can of Ro-Tel hot diced tomato's with habaneros and some ground beef. And of course, lots of garlic and a dash or two of hot sauce. Yummy. Thank you God, for the cast iron stomach.

    Wow, Ike Willis that is a lot of heat. I wouldn't even try something like that, but I think my roomie might like it. He is a hot sauce freak. I do like hot food, but not set your stomach on fire hot! I am having chicken drumsticks, with a pasta salad with veggies in it. I think I will make a s'more for dessert. Hard to beat a S'more really!

    @K E Gordon That sounds like a sandwich my dad would make. He was big into making hash on Sunday mornings after church, too, and that was my favorite.

    @Ike Willis I love Rotel, but I have to use the mild to medium ones, otherwise I'm in trouble. I'm glad you can still enjoy some of your favorites, despite the dietary restrictions. I'm always slightly anxious when I don't have enough Rotel in the house, because I use it in so many of my dishes, especially casseroles.

    Supper this evening will be simple. Probably sandwhiches. But i have a recipe for fried pickles that i may fry up as well. The recipe calls for bread crumbs, red pepper, paprika, onion powder and a little salt. Won't hurt to try it out.

    We use a lot of Tabasco sauce( we make our own) and also eat hot peppers and salsa.

    Today's menu is fried fish, cole slaw, and probably potatoes. All ingredients from our lake or garden.

    Can't beat that Sheldon! I see I'll be making my way to Arkansas when the SHTF. Hopefully you won't shoot me. :)


    It's about a 26 hour drive...nope, won't make it on a tank of gas. :(

    That sounds like a good place to head, @Chrissy Page, @Sheldon Scott's always got delicious sounding food!

    Last night was leftovers again. I was going to make salmon patties later, but it's feeling more like a soup and crackers kind of day, at least right now. I always keep at least a few cans on hand, but if I'm feeling better, I might chance it. I came across a few different recipes for them recently, so I'll have to compare them and see which I like best.

    For the fourth of July, we are having spicy sausage dogs and chips. Lots of mayo, onions, and sweet relish for toppings as well. Oh, can't forget the mustard!
