It was a fend-for-yourself kinda day. The better half had leftover beef with macaroni and I (gourmet that I am) heated up 4 crispy fish sticks and made myself a fish sandwich on a toasted bun with mayo, lettuce and tomato. I also had half an avocado, sliced. And a Corona.
We had running around to do today, and also went to the fitness center, so I made the chicken and stuffing dinner in the crockpot. This is SO easy, and has become a favorite for both of us. Fiber cake for dessert. Leftovers for the little doggies.
As mentioned in another thread, I'm trying a different grocery delivery service (Kroger) today. Since they have a great hot deli (an actual little cafe inside the store), I ordered fried chicken for our dinner. I usually order a rotisserie chicken with my groceries so I'm shakin' things up...haha. I guess I'll make some mashed potatoes and a salad to have with the chicken.
Chicken-Broccoli Casserole.....tweaked https://www.foodnetwork.com/recipes/trisha-yearwood/chicken-broccoli-casserole-2797797
Spaghetti with homemade meat sauce. I had to buy a new jar of parmesan today and woozer did it ever take a price hike.
Chicken fried steak, onion gravy, rice, sauteed zucchini. The house smells like a short-order kitchen.
I haven't had chicken fried steak since my dentures are unable to use. I love it but not paying $70K for implants and titanium teeth just for chicken fried steak. The last of the homemade chili and jalapeno cornbread for supper as I type this.
Roast chicken, baked potato, leftover roast potatoes, veg and gravy. I would've had a cream donut for afters but I couldn't resist it so had that earlier (. ❛ ᴗ ❛.)
I wanted to make the baked cabbage pie again, but when I got groceries, both of the Walmart stores were out of cabbage, so I ordered bok choy instead. I am not sure how it will turn out, but today i am making the bok choy pie using the cabbage pie recipe. It is in the toaster oven and cooking, so I am hoping that it turns out good. I had part of a ring of polish sausage leftover, and I chopped that into small pieces and added it into the recipe. Experiments are part of the fun of life, and thankfully, the dogs seem to think so , too, when mine do not turn out as well as I imagined they would. Edit to add: it is definitely much better made with cabbage, but was still good made with the bok choy.
With my supper time just 45 minutes away and me still full from my lunch of potato-breaded haddock, I am opting just to have a piece of Marie Calendars' chocolate pie. To fully appreciate my supper choice see my story in my new Diary thread, " The Perils of Being a Widow."
